      Fai la crema con la ricetta più stupidq e complicata del mondo, ti viene piena di grumi che devi passarla a setaccio, e ci fai anche un video per insegnare agli altri come fare male le cose? Nessun pasticciere fa così la crema, ci sono tecniche molto più facili e veloci, e non fanno venire i grumi!

      Me too just did these and they cooked perfectly my definitely my go to recipe for these give them a go I think the things that make them hold shape is drying the dough for longer in the pan make sure you don’t rush that step I did dozens of recipes on RUclips for these and I think because I only did them in the pan for as long as they say it wasn’t long enough, when I added the eggs like the others say the dough was quite thin but this dough is thicker after that stage and worked 😅 I even bought a new oven thinking it wasn’t getting hot enough anyway this really is fool proof xx

      Wow I don’t know your name but can I just say hello and thank you I have tried to make these from other recipes on here but they all rise so well until I turned the heat down like it says too then they would go flat, yours have turned out beautifully and is so easy to pipe without it going all over my new go too eclair recipe it’s amazing have a great weekend ❤️😘

    It's always a struggle with the éclairs. I like to add the custard directly w/o whipped cream for a more intense flavour.

    How about the oven need onn the fan or not. Before bake need spray with water or not

      It's better without a fan for sure and you don't need water. Our problem now is that the fan in our oven does not turn off... I had to install special plugs.

    Mixing well all custard ingredients,including eggs,in cold milk and then bringing to boil working just the same but saving you some time and effort 😜

    Remember the paste must be completely cold before piping it onto the tray. If not there will be gunge inside the eclair.

    The custard you made with all-purpose flour I used to do as you did for years,but after I moved to U.S if I do the same
    receipt the tastes after cooking is terrible. Now I have to use corn starch.Can anyone tell me why? Why the taste of the flour is bad?

      The Temperature of the dough Was too hot, you have to wait to cool down, before you add the eggs. Thats why it tastes like scrampled eggs
