    This brings back many childhood memories. My mom used to make *Labaneh* out of homemade goat yogurt. It's fat content, sour, and salty flavor made it taste delicious. Then we "baptized" it with homemade olive oil alongside some cold *watermelons* to make the best brunch.
    Seriously, the combination of Labaneh and watermelon is one of a kind. You should try it if you haven't yet!

    In the Netherlands we call this hangop. Literally translated to ‘hang it up’. But with Dutch full fat yoghurt instead of greek one.

    Mmmmm. I make this kind of cheese from homemade kefir (made with milk kefir grains). It has a more intensive taste. I will try the olive oil preservation method. Looks great.

    Well, salt can be different and in my case 1 tbs salt per 1 kg yogurt resulted in cheese being way saltier than I expected. 1 tbs of the salt I used was equal to 15 grams. Another reason for cheese being salty might be that instead of strained yogurt I used regular one made from 6% fat milk - thinking that I'll be straining it afterwards anyway. Apart from being salty, the taste was amazing!
    Fat content does affect how much salt a product can absorb: the fattier is the product, the less salt it can take. One way or another, for you folks who will be using less fat yogurt for this recipe: 10 g (or 2/3 tbs) salt per kilo is probably more than enough. With this decreased salt content, you'll probably have to keep the yogurt straining for full 2 days.

    To make 'mizithra': take the ball of cream cheese and freeze it for a few days take it out then grate it over your food.

    Would you recommend using a kitchen towel to make other types of cheese? I want to try to make cheese but many recipes I see recommend using a cheesecloth. Unfortunately I live in Japan and they are not easy to find (and anything related to cheese is very expensive here).

      Any finely woven cotton cloth is fine. You want something that is thin enough to allow the liquid to drip out. Thin clean dish towels are fine. I use them all the time. By the way, cheese cloth is just another name for gauze. You know, like the gauze used for medical dressings.

    Yo! I did this the first time with fine salt and it worked real good. Second time just now I used a more coarse salt because that's all I had and the result was salty af . But I'm reading other recipes online about this technique and some don't have salt at All? U reckon the salt is necessary or that the whey will drip out naturally anyway even without salt???

      Caleb Jung It's not some special, but just only a Greek STRAINED yoghurt. For example the FAGE Total strained yoghourt is the perfect one...

      I did a quick Google search and it says labneh can be stored in olive oil for 2 months in the fridge.

      Akis Kitchen - Thanks a lot Akis for your reply. Meanwhile I went to the site and I followed your instructions. I already prepared one batch with 1 Kilo of Greek yogurt. It was delicious. The cheese balls are now submerged in olive oil. My husband fell in love with your creation. I bet they won’t last a month! ❤️
