Are your fresh herbs in potted earth or water ? how long do they remain there without wilting . I believe they are rooted in the pot , since i wanted to try your way . nice recipe , will try but too much feta makes too salty .

It's a lot of spinach...stalks have to be removed so add 1/2 hour to de-stalk the spinach, and have a very patient friend to help you. Will try!
