I tried this and while it doesn’t have same texture as a normal pancake it’s pretty tasty and edible. Would recommend for an alternative way of eating bananas

No, cornstarch and Baking powder are different.

I found you can skip the backing powder altogether. However, the banana must be firm or the pancake will want to fall apart when you flip it. Over ripe will taste better but they don't stay together very well without the backing powder. And on a side note, these are really good!
