- This beef tenderloin recipe is a keeper! This roasted beef tenderloin has a fantastic flavor with the garlic-herb crust & this roasting method produces melt-in-your-mouth tender filet of beef.

► 2 lb filet of beef, trimmed and tied
► 2 Tbsp unsalted butter, room temperature
► 1 Tbsp prepared Horseradish, strained
► 2 garlic cloves
► 1 Tbsp fresh rosemary leaves
► 1/2 Tbsp fresh thyme leaves
► 1 1/2 tsp salt

DONENESS CHART:
22-23 min for rare (120-125˚F),
24-26 minutes medium-rare (130-135˚F)
28-30 minutes for medium doneness (138-140˚F) (what we aim for)
30-32 minutes for medium-well doneness (140-145˚F)

If you salted and wrapped the loin in plastic wrap refrigerating overnight then bringing it to room temp before cooking it would have been seasoned all the way through. The salt makes it even more juicy and tender.

Natasha great recipe. It looked in the video that the filet you initially cut looked different than the pieces you displayed and ate with the sauce. The initially cut meat was much lighter in color. Was the video edited?

Hi Nicky! I’m glad you enjoy my recipes. The doneness chart is for the internal temperature of the meat, not the oven. They are correct, it’s measured in Fahrenheit.
The oven temperature should be 500˚F for 28-30 min for medium doneness meat which is about 140-145˚F.

Hello. I made this recipe and it was “delicious”. Expensive to buy, but, worth it for a special occasion.
One problem I had, was at the high oven temperature at 500 caused the oven to create a film of smoke because of the butter melting. The film of smoke was thru the house. Too bad. How to stop that from happening?
Hi Donna. The higher heat could be causing the smoking. I do get a little bit of smoke, so I turn on my fan above the range before I pull it from the oven. It may help to reduce the heat to 450˚F and bake slightly longer (testing with a thermometer to ensure doneness).

I have a question, have you ever thought about getting a freeze drying machine from Harvest Right and then trying to freeze dry some of your recipes for camping, hikers, and for emergencies? Some thing like this tenderloin would be great to try and freeze dry and then rehydrate and see how it does. Not only that, you could get two videos for one recipe, and expand your viewing audience as well. Just a thought. God Bless and keep up the great work.

Anthony, tying a tenderloin is important for even cooking. It makes the thickness more uniform and if you have a thin end on one side, you can tuck it under the tenderloin and tie to secure it in place, otherwise one end will be raw and the other over-cooked.

Why would anyone ruin a costly cut of fine beef tenderloin with all the spices and herbs? Save that for a skirt steak or some other cheap cut of meat. Salt and a very light dusting of black pepper is the perfect seasoning for a beef tenderloin. Basted in salt free butter would be awesome too. I was about to complement her on the perfect doneness of the tenderloin but here she goes ruining some more with horseradish sauce.
