    You said the oven was at 425 - how long did you keep it in the oven for?

      Hi Michael - Stew took the filets out of the oven when the thermometer read 125 degrees F. Then tented with foil for about 15 minutes. So with carry over cooking, it reached about 130 degrees F for medium rare. At 425 degrees F, plan on about 15-16 minutes per pound, but we recommend using an instant-read thermometer for best results. Hope this helps.
