The death at the start was a sort of failsafe measure: If you've been falling/midair for too long, the game will kill you to prevent potential softlocking, since (to my knowledge) there is no ledge high enough in the game (without a killzone at the bottom) where you should be falling for that long.
It's a FromSoftware tradition since they like to reuse the engine. It applies to bosses and enemies too, so glitches can end up helping you in the end.
I experienced that as well when I was jumping through one of the ruins in Limgrave... and promptly got stuck in geometry. Already had that happen in previous FromSoft games so I immediately quit before the failsafe kicked in.
If you're in the fall animation for 10 seconds you die. However, if you are mounted while you're falling, you can still attack. Attacking while falling resets the falling animation, and thus resetting the 10 seconds death timer. If you find a cliff that doesn't have the standard kill box, you can use the infinite falling exploit to fall until out of the level itself. After about a minute, the ground will despawn under the feet of the enemies, killing every enemy in the level and getting you a ton of runes. You can still use the map to teleport to sites of grace. Keep in mind that the game doesn't pause while the map's open, but 10 seconds should be more than enough time to choose where to teleport to. I only know of one cliff in the game where you can do this, and it's a little tricky to get to it (it involves jumping up a cliff Skyrim-style), but it's my favorite farming technique.
