In my own search for a really good go2 cake recipe I found this technique: while blending the butter, pour in the sugar gradually [a stand mixer helps]. then continue to blend on medium speed until it's fluffy. about 2 minutes. I believe this works bc, the sugar has time to break down and dissolve in the butter. The texture should be smooth and silky. You can tell that the butter-sugar mix is well combined by tasting it or rubbing a little between your fingers. The less grit, the better. This portion of mixing is the crucial point of ANY flour based cake. Once I started incorporating this method my cakes came out light and moist and stayed moist longer.

6I just wondered why soda, when you were using regular milk. I have buttermilk and always use soda only if using it or sour cream. Just confused. Lol
O ok I get now . When I use baking soda it helps the cake to raise a little better.
