TACOS GOBERNADOR | Governor Tacos ❤

Tacos Gobernador are a wonderful mix of taco and quesadilla, the are filled with a delicious combination of chunky pieces of shrimp and vegetables (poblano or bell peppers) and onion, tomatoes and a tasty mix of herbs and spices like cilantro, oregano, ground cumin, paprika, celery seed and some wonderful smokey Adobo Sauce. You can use either corn or flour tortillas, I like to gently brush some oil on my tortillas then put them on the griddle to toast lightly, then I top them with freshly grated Oaxaca cheese till melted, then I top it with a generous amount of my shrimp filling. Once on the plate I like to drizzle some of my delicious Tomatillo salsa or sour cream, these amazing Tacos Gobernador were made for a governor, but fit for a king.
INGREDIENTS------------------------
1 lb large shrimp (peeled, deveined and cut into nice size pieces)
1/2 large onion (finely diced)
1 large diced Roma tomato (seeds removed)
1 large POBLANO pepper
2 large minced garlic cloves
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp mexican oregano
1/4 tsp celery seed
1/4 tsp ground cumin
2 Tbsp Adobo sauce
kosher salt (to your liking)
pepper (to your liking)
chopped cilantro (as needed)
Corn tortillas (as needed)
Freshly grated Oaxaca cheese (as needed)
4 Tbsp butter
Oil for griddle
SEASONING----------------
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp Mexican oregano
1/4 tsp celery seed
1/4 tsp ground cumin
TOPPINGS---------------------------
My Tomatillo avocado salsa (link below)
sour cream (as needed)

Not sure if you have a Marc's brand grocery store in Cinci or not, but they sell a 2lb bag of Argentinan red shrimp for $14. Even if you don't have a Marc's ask your grocer if they can get them. Best shrimp ever! Waaaaaayyyy better than shrimp shipped from Asia.

Tacos Gebernador, y'all are delicious! These tacos looks incredibly delicious my sweet amiga and you know I'm going to customize them for our house. Love the spice blend, especially love the veggies that go in them as poblano peppers have to be my favorite ingredient to use along with cilantro whenever I can. You my dear are a natural story teller and you do it so well as you teach us your secrets to making some delicious recipes. I don't know if you've ever seen or they show it up there, Patti's Mexican Kitchen on PBS. It comes on here on Saturday afternoons and she reminds me of you with her delicious recipes and her stories. If you happen to find her program, I'm sure you'll love her. As we get ready for the season to change this week, I wish nothing but beautiful blessings to fall upon you and your Ron.
