Thanks so much for showing that you can make a delicious brisket cooked hot & fast. I really just want to get up in the morning and have it ready for dinner, and you proved this can be done. Plus, I have a char-griller similar to yours and always wondered if I should put the brisket on the top rack or the lower one. You answered that for me. Once you wrap in the towel do you put it in a cooler or just leave it on the counter? And how long do you keep it wrapped before cutting?
Did you use wood your entire cook after you started the fire with the charcole? Keep up the great content

Awesome I wish I would have tried tuning plates or turning that charcoal cooking chamber great upside down and then running bigger fires but still did a great job I'd buy another one let me know if you try the tuning plate thing
I dug mine, but I ended up giving it to a buddy starting his catering business. Might need to get me a new one.
