  • On this video, I smoked up a Texas style (salt and pepper only) brisket on my Yoder Frontiersman. This my first time ever smoking a Texas style brisket but I wanted to see if in fact it would come out good. The flavor was really good but I feel it needed some granulated garlic to give the brisket a little more flavor.

    One of these days I'm goin to really feel comfortable/ confident when it comes to trimming a whole brisket.... I really enjoy on how u explain in details when it comes to trimming a brisket

    This was a very nice video, Joe. I like how you took the viewer by the hand and walked us through every step. Anyone smoking brisket for the first time should watch this video first. I agree with you on the salt and pepper… I always add a little garlic to mine. Backyard cooking is all about doing it to your taste. I really enjoyed this one… well done my friend. 👍👍👍

    One of my go to rubs I use for brisket is 60/40 s&p but I also add garlic powder, cayenne, onion powder and paprika

    Being in Australia unless you preorder you can’t get a decent size brisket. So I have just been doing 1-2 kg flats with great success. But now my local butcher has full ones....smashing it out tomorrow. Thanks for the great video

    Thanks for the honest opinion about salt & pepper. I've always added a few different ingredients to my rub with the salt and pepper, but I think people get hung up too much on what they see on TV. In the end, you have to experiment and cook what - and how - you like!

      Very well done video.
      I noticed you didn’t use a liquid to make the rub stick. Do you suggest any? I smoke ribs and chicken using Worcestershire sauce . Mustard on butts. Also spritz w/50-50 apple cider vinegar and apple juice. So on a brisket, I’m guessing apple juice would be not good because of the sugar.
      I’m a little new with beef. ( Done one brisket sometime ago). So I want to get a good rub together. How does 14/ cup kosher salt.
      1/2 cup freshly ground pepper corns And 1/4 cup garlic powder sound? I’ve got my pork & chicken rub down. Nothing but compliments . Thanks for your reply in advance.
      I cook on a Lonestar Grillz 24x60”
      single door offset. Cooks like a machine.

      Nice Jim. If the surface is nice & moist, I may not use a binder. Your rub sounds good but I would only add 2 tablespoons of garlic powder.👍

    Love your honesty on tweaking the rub. I need to try hot and fast sometime too. 17 hour cooks by myself on my offset gets a bit long.

    Gotta say I was surprised by fat cap down. I thought on offset smokers fat cap up was the way to go. I’m a total newbie though so I’ve got no idea!!! Excellent video, sir! Job well done. Looking forward to watching more of your channel.

      Thanks Dave. It usually is but this smoker has tuning plates that run from the firebox to the exhaust stack. This means the heat goes from the bottom up. I can also smoke with a damper open that converts it to a traditional offset where the heat goes from the top down. 👍🏼Thanks for watching.

    Boy does that look good! Great vid joe! Can you tell a difference between a low and slow cook to a fast and hot? I’m looking to doing one for the fam hopefully soon but would like to know which one you would recommend for a rookie! Lol also did you do half cider half water? Any help is appreciated!       Hello Joe! The main difference on a low and slow is you will be a darker bark because of how much longer the meat is exposed to the smoke. There's also a smokier flavor on the low and slow cooks. Yes sir, half apple cider vinegar and half water. 👍🏼

    Fantastic video sir and just to let you know me and my twin boys have used this video as a reference the last 3 times we have done brisket and it blows the guests away Everytime! Do have one question though. What is your water to ACV ratio in the sprayer? Just curious. Thanks again

      Great question. I like to pull the briskets off my smoker, place them on an aluminum pan (still wrapped in butcher paper) and let the temp come down to 165ish . I either slice at that point or place it in cooler to stay warm.👍

    That discolored meat on the edges is from where they clean the carcass with scalding hot water. I would trim all that off and pitch it.

      I used to use Mesquite and I really like it but many people think the flavor is too strong. I switched to post oak and it's really good but not as strong. Mesquite would be my preferred.👍🏼

      Hello Chris, that all depends. Were you looking at a pellet smoker or an offset smoker? I highly recommend people start with a pellet smoker.

      You know I was a Mesquite guy for the longest time. I mainly use post oak now because that's what many Texas traditional BBQ joints use and I love the flavor. I've never tried pecan and I'm thinking of giving it a shot. Thanks for watching David.👍🏼

      Hello Young, you can do that with no issues. My smoker runs so efficient so I'll use one split of wood every hour plus you will still get smoke flavor using butcher paper. Thanks for watching.🤘

    I know you know this since you're an excellent cook Joe, but sometimes that "little something extra" missing is not enough salt. Probably not the case here, but i have found mild salt suppresses all the flavors. I have been using SPG for years before it was "spg" and it definitely is noticeable when the G is absent.

    You left some of the old brown meat on the point. I would have cut that off. I want all fresh meat. But otherwise educational. I smoke slow with charcoal. And the #BBQPITBOYS use SPG (Salt Pepper and GarlicPowder) Thats the rub I have been using

      Bark comes off to easy because it was cooked high and fast. And you can tell by the weak smoke ring and seasoning comes off to easy. Looks good, but I would cook at 250F to 275F. And only open to spritz every two hours. And cook for 12 hours. Wouldnt open the lid that often to check temp. I wouldnt check temp at all. The idea is the smoke is to help cure and cook the meat. To keep it soft and tender. Not 320 Temps. Unless Joe kicked it down after a hour or so. But low and slow is the best. Covered hold in moisture with a little less smoky flavor. No covering makes it really barky. And with a strong smoking flavor. Want a good smoked brisket put in some love and cook it longer and lower temp less seasoning. If ya wanna have a good beefy smoky flavor.

    A texas style brisket is not known to be cooked high and fast thats why they say to smoke a tru texas style brisket should be low and slow you just ruined a nice cut piece of beef and turned it into a shoe leather

    Sorry man, but that Brisket looks as dry as can be. It doesn’t drip & it doesn’t fall apart from the fat layer. Your gloves reflect the fact. Nice video though, just being honest.

    You need to cut off all the oxidized meat from the brisket that is nasty need to take off all the silk layer of skin off the meat on the slim slide oven brisket
