Great video! In my personal experience, you can take the brisket off the smoker around 180° to 185° and start the rest phase around 150° or so and the rest will finish the tenderizing. I read years ago that fat doesn't render below 150° so maybe bump up the oven to 150° to 155° to continue rendering if you take it off a 180 to 185. Cheers
Yep, cooking longer definitely would have helped with tenderness. I always probe in the flat where the point is resting on top of it. If that’s tender then the rest of the brisket will be too
Dang I guess I am old school well iam 64 y old but when I cook a brisket I just trim just a little fat wrap it up in foil cook for 8 to 10 hrs thin I eat ❤❤❤❤❤❤ no complains yet😊😊😊😊

I am going to follow this method on a costco prime next week. For the overnight rest, did u leave the boat open or cover the top in foil? Need to try a fold-over sandwich!
Definitely give the fold-over a shot! I didn’t cover the brisket during the overnight rest. I left it tightly wrapped in the boat with the top exposed just like during the cook

@@ryanbramich6951 It was between $5-6lb. Another reason why I was looking for a prime that was smaller and unscalped. Prime was $2.99/lb when I got that brisket
