If you haven't already, I'd love to see a video for the Baker's chocolate frosting. I can never get the sweetener to dissolve and I can't seem to get the ratio right either, never not bitter.
Hi Species710! In the video, I am using melted chocolate ganache, but if I do say so myself, I have a great chocolate frosting. I will try to get it in as a video before Christmas. Have a great weekend!

Hi Fernanda! Substitute with 1 tablespoon of very fine coconut flour. But please note that this will change the taste and carb count. Or, perhaps even use 4 teaspoons of unflavored regular protein powder instead. Cheers!
Hi Patricia! In the past, I have used xanthan gum and guar gum, and have found that I wasn't always pleased with the results. That is why in all of my recipes, my thickener and binder of choice is always glucomannan. Glucomannan is derived from a plant, and gives me consistent results in both baking and in gravies. If you can get glucomannan, I think that you will be pleased with this ingredient. Here is a link for the one that I use: amzn.to/2lRApNA However if you need to substitute, xanthan gum would be my next choice, but I cannot guarantee the texture of these cookies with xanthan gum. If you do use xanthan gum, let me know how it turns out - I would love to hear from you. Cheers!
