Peanut Butter Chocolate Chip Muffins

- These easy muffins put a subtle peanut butter flavor in a light muffin with the added treat of some chocolate goodness. The recipe calls for blending the peanut butter into other wet ingredients to insure good distribution throughout the batter.
2 cups flour
1 TBSP baking powder
1/2 tsp salt
1 cup milk
2 eggs
1/2 cup sugar
1/2 cup creamy peanut butter
1/2 cup miniature chocolate chips
Preheat oven to 400 degrees. Grease or line with baking cups a 12-cup muffin tin.
In a large bowl add flour, baking powder and salt. Whisk together and set aside.
Into the jar of an electric blender add milk, eggs, sugar and peanut butter. Blend at high speed until completely blended together. Add wet ingredients to flour mixture. Stir until just combined. Stir in chocolate chips.
Fill muffin cups 2/3 of the way with batter. Bake at 400 degrees for 15-20 minutes or until golden brown and a toothpick inserted into center of muffins comes out clean. Remove from oven and muffin tin and allow to cool on cooling rack. Serve with butter - or more peanut butter!

Hello Kevin and Maryanne. I have a request. In all the cookbooks you have, do you have the Fleishmans Rich Roll dough recipie. I used to make that for years and years, and have lost it. This particular recipie uses scalded milk and at least one egg, I believe, but I am for sure on the scalded milk. I have even contact Fleishmans, but to no avail. Would love it if you can find it.
