½ teaspoon (3mL) vanilla extract
2 tablespoons (25g) granulated sweetener of choice (I used Lakanto classic)
3 tablespoons (45mL) coconut oil or any oil you prefer
1 tablespoon (15mL) unsweetened almond milk
⅓ cup (35g) blanched almond flour
2 tablespoons (14g) unsweetened cocoa powder (I used dutch processed cocoa powder)
½ teaspoon (2g) baking powder
pinch of salt
4 large egg whites
¼ teaspoon (1g) cream of tartar or ½ teaspoon (3mL) lemon juice
3 tablespoons (38g) granulated sweetener (I used Lakanto classic)
1 cup (250mL) chilled heavy whipping cream
⅓ cup (65g) powdered sweetener or any powdered sweetener of choice
1 cup (250mL) chilled heavy whipping cream
3 tablespoons (20g) unsweetened cocoa powder
⅓ cup (65g) powdered erythritol or any powdered sweetener of choice
Bake at 335°F (168°C) for 20 minutes.
Yields 10 servings (macros per serving)

To anybody else who knows keto you can't have any carbs or in this case desserts as people would all assume, but when you would see this that's keto??? How? If you can't have flour? They don't realize the alternatives and with alternatives you wouldn't think you were eating regular non keto food. So many years of now seeing keto desserts and that you can ketofy practically anything is amazing. I saw a panettone recipe that's somebody done of all the recipes you wouldn't think that could be done. I had to give up stuff like this but not anymore. What I'm trying to say this cake you can't even tell it's Keto it looks like a regular Yule log. It's looks delicious. I could just imagine taking a bite into that and actually tasting it that's how good it looks thank you ❤️🙂 another one down!

I love watching your artistry in preparing & video taping these desserts . I even tried a couple...and they were delicious. I tried it and it was ammmmmazing! The only change I made is I swapped the cream you used for the outer layer with chocolate ganache ( using double cream and dark chocolate 85% cacao and xylitol)

I made this on Christmas day. I left the roll base too long cooling before i put the cream on to then roll. It crumbled so i had to improviise. We had a noel fold. It was still lovely.
I have made it since with butter rather than coconut oil and rolled it sooner.. an amazing desert. 😊

I once made a low carb gingerbread yule cake. They said to roll it , to roll it up in a clean kitchen towel soon after it cooled, to finish cooling. Then unroll, lay flat to add filling and the curve would make it easier to roll with the filling added. I guess this cake is so soft you don't need to do that then?
