    I made two of these cakes using this recipe. Here are my thoughts (just writing this because I was looking for someone in the comments section that made it). The frosting was a little too salty for me, I made it over without the salt and it was the bees knees! Stabilize the whipped cream with some gelatin if you’re making it ahead of time so it doesn’t collapse. If you do not like dry cake try brushing it with a syrup, I think a raspberry sauce would be out of this world! I think it dried out my cake more leaving it in the tea towel over night, if you decide to make it ahead like I did you might want to wrap it in cling wrap after it cools. Mine lasted assembled in the fridge for 2 days since I stabilized the whip. Thank you for the recipe, it was a hit!

      I haven't made his recipe but when I make these ahead of time I do stabilize the whipped cream with gelatin or more cream of tartar. I assemble the filling in the sponge and leave it wrapped in cling film until I want to decorate it. Making a coffee frosting is great to counter the sweetness (if made for adults. No one needs a child strung out on caffeine). I make a pumpkin roll for fall- cream cheese filling and spiced frosting, this for Christmas, and a fruit one in the spring-add jam in the whipped cream or layer it with a swiss meringue buttercream frosting. For the other rolls I do not cut the extra bit to make a branch. You can change the fillings and frosting to suit the cake. Edible flowers are amazing for spring decorations.

      I’m using the recipe right now and I choose to stabilize with cream cheese. It’s firm and adds a nice tanginess.

    Since I was 12 years old I have wanted to make one of these. I saw one for the first time in my mom's McCall's magazine. 43 years later my 15 year old niece and I will make one for the first time, on Christmas eve, at my dad's house. I believe my mother's spirit may join us in the kitchen.

    I'm finally going to make this. I've made many a cake rolls but never a Buche De Noel. I've got a tip for those who might be afraid/nervous to flip the sponge onto the towel. Instead of sprinkling the powdered sugar on the towel dust it onto your sponge as soon as you take it out of the oven. Then use a big enough board (I use my extra large cutting board) with the tee towel on it and invert the sponge. Peel off your parchment paper, dust some more powdered sugar just as John did onto the sponge then get to rolling. I've always hated flipping that hot sponge onto the towel, burning my fingers and having powdered sugar flying everywhere so I decided to give this a try. Works like a charm every time 👍

      I always invert it that way and use a wire rack, which is the same size as the baking pan.

      Tammie~ cool tips! When I first read your post... I thought... 🤔 .. "dust the powdered sugar onto my sponge --> 🧽?" But I re-read it and DOH!!!.. 😆 LOL!! I've always wanted to make a cake roll, but then I overthink the rolling part and wind up baking something else. I'm going to give it a try for Christmas! Great video & great "Tammie Tips"!

When I made my 1st one I felt the same way but what had me more intimated was the burning aspect. Can't tell you how many rolls I made that "old" way before the ligh bulb turned on 😄 I really hope you give it a try. I promise. You will be successful.     I made this yesterday for my son, Lincoln's first birthday. We did a Lincoln Log birthday party theme. I hadn't found this video until I had already done a different cake recipe but didn't want to use their marcsopone filling and landed here. LOVED the instructions on how to fill and roll the cake. Loved the frosting so much and got so many compliments on the cake!

    This is so cool! For anyone wondering, this type of cake is actually called a chiffon cake, which doesn’t have any leaveners and uses meringue instead. Just a little science for ya :)

    I can’t wait to make again! I suggest using a 1M or any large open star tip to apply the frosting as it makes it look more log like than the fork. The mushrooms are amazing and simple!

    if you're not feeling like cleaning a stand mixer's bowl in between steps (I assume most of us have one), I would recommend hand mixer for the yolk part

    Hi John, My nephew and I made the Yule log for Christmas and it was the show stopper. We substituted the filling with mascarpone, cream cheese and sugar filling and since the stores ran out of cranberries, I ended up using raspberries. Would love to send you the pictures but dunno how to upload them here on RUclips. Absolutely fantastic recipe and idea. Very creative and inspiring indeed!

    I made this cake last year and it was a HIT!!! I’m making it again for this years Yule holiday. Gonna go to the store and buy my ingredients, I just wish I had 2 ovens to make the mushrooms and the cake at the same time. But oh well. I’ll make the cake first and then the mushrooms second.

    great simple recipe! I used a bit of coffee and dark cocoa for depth in the frosting, but the cake was a perfect spongey texture long after baking! Made the day ahead and the added the 3 tbsp of oil, it was a life-saver :)

    This is amazing and I was trying to fins something to make my mom for her birthday, and I wanted to make her a treat that is super asethetic and adorable. we just moved across the country into a small apartment and my mom doesn´t want anymore stuff, so I really hope she likes this recipe!     I am SO glad to see your confectioner's sugar-dusted counter! One side of my counter looks like a dust storm hit, thanks to the cocoa powder. The other side looks like a snow squall struck. I overdid the "dusting" of the surfaces and when I flopped the cake onto the dusted towel, a fine cloud of confectioner's sugar drifted off the counter! Funny! Good thing I'm enjoying this process and I have your video near (away from cocoa powder and sugar) to make sure I'm doing it right!

    I love these. I usually make a simple cocoa sponge cake,(ribbon method 😉), whipped cream filling and fudge, buttercream or ganache frosting; (and usually skip the meringues, because 🤫one of the reasons why I love this is because it's relatively quick to make.) Your meringue mushrooms are cute though.

    Just made this for New Year's for the family. Great recipe! Suggested improvement: moisten the sponge cake with latte before assembling. The coffee brings out the chocolate flavour.

      I’m planning to do the same. I plan to add some finely crushed candy cane, a few drops of peppermint oil in place of the vanilla and some optional red food coloring (paste or gel) into the whipped cream mixture.

    i typically use a chocolate cream cheese or buttercream icing for the filling and ganache for the top when i make a yule log since prefer very chocolaty chocolate cakes same with most of my family

    My daughter's birthday is this 23rd, basically a Xmas baby, here in Denmark we bake for celebrations a kagemand (translated is "man-cake" lol it looks like a giant gingerbread man!) but this year I'll go with this log instead bc it is all made of chocolate and it's beautiful.     Used a different cake recipe but followed your recipe for the icing, whipped cream, and rolling method and it worked really well!!! Accidentally used dark coca powder and would probably not recommend doing that but otherwise it turned out beautiful!

    I make a chocolate yule log every year for the holidays, and every year I try a different recipe in search of the best one, and this one takes the cake! (Pun intended).
    The frosting goes well with the cake, and the filling is the perfect balance between the chocolate. The only change I made is I used dutch-processed cocoa power, which makes the cake much more rich and adds a coffee like flavor! Thank you for this recipe, and happy holidays 🎄❤

    This looks so good! Made one a few yrs ago, Black Forest w/cherry whipped cream filling, mmm. Let the kids find mint in the yard to decorate, and used Japanese chocolate mushrooms (chocarooms?) bc I had no time for meringue (though they do look lovely) so easy!

      I make this every year, and yes, you can tighten it up with no problem. In fact, I usually wait a couple of minutes after taking the cake out of the oven before I turn it over onto the powdered sugar dish towel so that the steam from the heat doesn’t ‘wet’ the cooked cake and possibly make it soggy. Just my 2 cents. 🙂

    You know, so I live in France, and while I do see bûche de Noël like this in super markets and bakeries, , I have yet to see it on an actual French person's Christmas table. Wanna know what I do see? Bûche glacée!!! Ice cream!!!! Mousse!!!! Sorbet!!! Tropical flavors!!!!! I'm not joking 😂😂😂 this will be my 4 time spending Christmas in France and I'm still weirded out by it 😂😂😂😂

    i just made this for my birthday. i work for a tree removal company and a coworker had a birthday close to mine.
    i didn’t do the mushrooms, used ice cream for the filling, and i made chocolate whipped cream for the outside.
    i made a chainsaw to go on it though. i used my whipping cream carton and some cardboard to make it with a tin foil chain.
    i loved the lighter sweetness of the whipped cream.

    Looks amazing.
    I cheat with my Yule log. There’s a really good bakery nearby that makes the most amazing cream rolls year round. I buy 2 so that it’s long enough, cut the branch bit and decorate like normal 🤫

      @@PreppyKitchen That's cool! French-Canadian Christmas dishes are wonderful! I am sure that you are familiar with the tourtières or meat pies, sugar pies, meatballs, bûche, potato candy, molasses cookies and the list goes on!
