    I used to make high carb versions of this all the time! Mine had an orange frosting filling, which went well with the chocolate. They're actually very easy to make, but the high carb versions use ZERO leavening, and just rely on eggs for the slight rise. That's what keeps them from cracking. If you're going to use a whipped cream filling, I recommend using stabilized whipped cream, in which you add gelatin. That keeps it from melting.

    I made this for Christmas, and it was fantastic...so beautiful. I followed everything to a "t" in your recipe ,except I used my keto flour and didn't do the oat fiber. It was the best keto cake I've ever made! Turned out perfectly and everyone loved it!! Thank you ❣️

    Lol Awesome you made my day and week! I never mastered the much desired roll either. I also very much need a dessert I will be substituting the whipped cream with my thick coconut milk yogurt I finally mastered. It will be close enough! And will have my Ginger tea with Pumpkin Spice Whiskey ..... Awesome you probably do know how much I appreciate this!!!!🥰🥰🥰

    Can coconut flour replace the fiber ? Anything else replace it ? I do not have the money to buy something I will not be using a lot. Thank you for posting and wishing you and yours a very Merry Christmas 🎅🎄🎁

      Same question 😊, what can substitute the oat fiber? I don't think coconut flour is a good substitute, though...it's very oily. It should be something from not soluble fiber family, like psyllium husk, maybe wheat bran...Maybe non sweetened coconut flakes 🤔
      I guess it depends on why does she add it to the dough. If it's not for texture but for nutritional benefits, maybe we could skip it at all, 😏

      Use allulose for sweetener, it keeps it soft and don't overbake the cake

      @@weslynnbobbitt5647 allulose browns too much, even though I did use it in this recipe. I use 50% Erythritol and 50% bocha sweet 🤷🏼‍♀️
      I keep forgetting she never responds so I’ll figure out the bake time!

      I haven’t used bamboo fiber at all. But it sounds like maybe they could be subbed out for each other.

      Yes, you can. Not sure if it's 1:1, but pretty sure it is. To verify, go check out Victoria's Keto Kitchen. She has recipes for her New Keto All Purpose Flour, one that subs oat fiber for bamboo fiber.

      Well, yes, it works 1:1 in the flour (which is why we all have the bamboo fiber), but will it work that way in THIS recipe? That's the question.

    Oat fiber can cost more than oat flour. Low carb ingredients are expensive as compared to "regular" ones and the quantities are small. 😒

    All the keto “natural” sugars out there have a funny taste to me . I just taste the difference. I wish I could find one that tasted like real sugar !

      Lakanto monk fruit is the closest for me.
      The thing is that, you have to get off the real sugar for a few months to break the addiction.
      Then try that Lakanto.
      I’m truly impressed with it. No blood sugar rise either.

      Agree, monk fruit is the best. And it's in crystals also, just like a real sugar. You can beat butter with it. Pricy though..
