I used to make high carb versions of this all the time! Mine had an orange frosting filling, which went well with the chocolate. They're actually very easy to make, but the high carb versions use ZERO leavening, and just rely on eggs for the slight rise. That's what keeps them from cracking. If you're going to use a whipped cream filling, I recommend using stabilized whipped cream, in which you add gelatin. That keeps it from melting.
I made this for Christmas, and it was fantastic...so beautiful. I followed everything to a "t" in your recipe ,except I used my keto flour and didn't do the oat fiber. It was the best keto cake I've ever made! Turned out perfectly and everyone loved it!! Thank you ❣️

I also very much need a dessert I will be substituting the whipped cream with my thick coconut milk yogurt I finally mastered. It will be close enough! Same question 😊, what can substitute the oat fiber? I don't think coconut flour is a good substitute, though...it's very oily. It should be something from not soluble fiber family, like psyllium husk, maybe wheat bran...Maybe non sweetened coconut flakes 🤔 I guess it depends on why does she add it to the dough. If it's not for texture but for nutritional benefits, maybe we could skip it at all, 😏

Lakanto monk fruit is the closest for me. The thing is that, you have to get off the real sugar for a few months to break the addiction. Then try that Lakanto. I’m truly impressed with it. No blood sugar rise either.

Use allulose for sweetener, it keeps it soft and don't overbake the cake

Oat fiber can cost more than oat flour. Low carb ingredients are expensive as compared to "regular" ones and the quantities are small. 😒
