    As an albanian I go back and forth to italy very often, and whilst all americans online talk about "italian" cuisine, they are actually talking about americanized italian cuisine. Ive gotta tell you men, you are the ONLY one who is actually doing authentic italian cuisine, just like they do in italian villages. Amazing men, you are the real deal. And extra kudos for the perfect explanations you give. 👏👏

      Thanks man! I try my best and do make plenty of Italian-American recipes, but I try to stick to the authentic ways of preparing the dishes. Thanks again🙏

    My grandmother used to make this using a pound of ditalini or small shells. It is a family favorite. My daughter and I make it all the time. The only difference is instead of pasta water my grandmother used 2 cans of peas and the juice from the cans. Plus she filled one of the cans with water and she swished it in both cans to get all the remnants from the cans and threw that in too. It is a great flavor. Topped off with ground black pepper. I am definitely going to try your recipe. Loving your channel! Bringing back so many memories! Keep up the awesome recipes .

    I dated a woman for many years who's parents immigrated from the Naples area. This is exactly how she taught me how to make it absent the extra virgin olive oil but I am going to try that next time. The dish is so simple and so good. Thanks for the video. You have a great channel.

    Love this! ...so I'm of the school that gradually adds in pasta water with finely grated cheese, to builds a silky glaze on the veg and pasta, rather than water in the bottom.

    I attempted to make this as my family usually makes pasta and peas with the red sauce. My half-sister made it all bianc and I liked it so I thought I'd try this, and I had panchettta. Something was needed, so I threw in some Romano cheese to make it more creamier and some butter and that just put it over the top! Thanks

    I recently made this by steaming a bag of peas, boiling a batch of shell pasta and once done, I added some spices and butter with EVOO and maybe a slight bit of salt. It was delicious! Not sure why some ppl get all into adding the pasta water and such. Its really not a complicated dish!

    This is how I had it and love it still. No red sauce version.
    Except I dont do all that ladling in of pasta water. I cook pasta separately and when its al dente I mix it with the onion and pea sauce.

    Chop some bacon at the start for an extra flavour. I have fresh mint so would be tempted to garnish with that or fried mint. Could also cook the pasta in chicken stock

    • @carolyn7298
      @carolyn7298 Год назад

      We use mint, too. But instead of a garnish, we always leave it whole and infuse the pasta with it by draining the pasta with the mint in the colander. In this case, I would add it whole to the pasta while it’s cooking with the peas the last minute or 30 seconds then take it out. We don’t eat it.

    Add chicken broth instead of pasta water.. more flavor and the pasta is already releasing starch into the broth to thicken

      @@SipandFeast Feast Growing up in NY, this dish is what we knew as Pasta Fazool and not just within our family. Family friends, neighbors etc. all made a version of this (pasta and peas) and called it Pasta Fazool. It was a very common, frequently served dish. As was Pasta and Ceci. I am curious to see what your Pasta Fazool is. Thanks for the recipe/technique. Haven’t had this in years. Will be nice to make and enjoy some night.
