Katherine you have good discerning taste to appreciate fine Chinese tea. By the way, the British East India Company wanted Chinese tea and silk but was disappointed that China did not want to trade. The Brits then introduced opium from India that unethically flooded China with addicts. The opium wars started when the Qing dynasty prohibited its importation. China lost the war, ceded territories with a series of unequal treaties leading to “Century of Humiliation”. We Chinese learned from our bitter history.

Longjing tea is probably the most expensive green tea in China. This kind of tea trees are widely planted in Xinchang, Zhejiang, and the "Longjing tea" there is much less expensive. However, the best flavor still comes from Longjing Village near Hangzhou. It is not surprising that real tea connoisseurs would splurge a thousand dollars on a SINGLE pound of authentic Longjing tea.

younger tea leaves are expenisve because when you harvest them, they ae quite few because the rest of the leaves on the plant are already mature. Young tea leaves have some more compounds that is good for you than what you would find in a mature tea leaf. The taste is also milder..
In England or really in Western packaging, they are called white tea.

Green tea has antioxidant properties which is good for health, but the taste for some may take some time to get used to. I drink it occasionally because it's health benefits. A lot of harvests out there these days used pesticides which isn't good, esp on fruits. Even animals are fed with some kinda steroids to help them grow faster. So there's only so much a human can do to avoid harmful effects.
