  • Kuih Lapis is a naturally vegan and gluten free kuih that's popular in Malaysia. It's soft, creamy and slightly chewy with coconut and pandan flavours plus a delightful hint of rose 🌹 The batter is easy to put together but steaming it is tedious as each layer of the kuih needs to be cooked one by one.     Kuih Lapis (Steamed Layer Cake)
    Makes a 7x7inch cake
    150g pure rice flour (not blended rice flour, and not glutinous rice flour)
    125g corn starch
    125g tapioca starch
    3/4 tsp salt
    600ml water
    400ml thick coconut cream, or coconut milk
    300g sugar
    4 pandan leaves
    A few drops of red food colouring
    1 tsp rose water or rose extract

    I love kueh lapis. Thank you from the bottom of my heart for sharing this recipe. All the previous recipes I tried were not to my satisfaction. Either too soft or too stiff. Yours looks perfect. I'll try to make it tomorrow or wednesday. Cannot wait. Once again, thank you so much.

      You're most welcome, I hope this one comes out how you like it! If you find the texture too soft or hard, play around with the ratio of rice flour, tapioca and corn starch to get the consistency that you really like. Just make sure they all add up to 400g, with the same amount of liquid. Happy cooking! ❤️✨

    制作 7x7 英寸的蛋糕
    150克纯米粉(不是混合米粉,也不是糯米粉)
    125克 玉米淀粉
    125克木薯淀粉
    3/4 茶匙 盐
    600毫升水
    400毫升浓椰浆,或椰奶
    糖300克
    4片香兰叶
    几滴红色食用色素
    1茶匙玫瑰水或玫瑰提取物😊

    thank you for sharing this recipe i had tried to make this yesterday but the recipe i was following said to use glutinous rice flour so maybe that is why mine turned out to be very sticky even after cooking it for so long. Although i'm not sure because this was my first time making it so it could just be my error

      Glutinous rice flour would make this very sticky for sure! Try the recipe with plain rice flour and I think you'll come out with a better result 😊

    What we substitute instead of tapioca starch in this recipe?

      You can but the texture might not be as bouncy. Try playing with the rice flour and corn starch ratio until you get the texture that you like 😊

      You can try, but it will probably change the texture!

      It needs to be pure rice flour, not blended rice flour or glutinous rice flour

      Sorry to hear you have trouble understanding me. You can change the speed of the video by clicking on settings and then 'Playback Speed' to a slower pace. There is also a transcript of the video so you can read along. Hope this helps
