Better than grilled cheese! French Onion Soup Sandwiches

    Ingredients for 2-3 large sandwiches:
    (makes 6 small or 3 large servings)
    2 small (10") or 1 large baguette
    3-4 medium yellow onions
    olive oil
    1/2-1 cup gruyere cheese
    1 tsp salt
    Broth:
    1/4 cup dry white wine
    1.5 cups vegetable or beef broth
    1 tsp thyme
    Directions:
    In a large, heavy bottom pan heat a couple tablespoons of olive oil over medium to medium low heat. While pan is heating peel and thinly slice, perpendicular to the root, the yellow onions. Add all the onions to the pan along with the salt, stir to coat. Cover the pan for 5-10 min to allow onions to steam and begin to cook down.
    Remove the lid and stir. Cool uncovered for 40 min to 1 hour, or until the onions are a dark, caramelized color. Stir occasionally so that the onions do not burn and DO NOT turn the heat up!
    Once onions are caramelized remove them from the pan and return the pan to the stove. Add wine to the pan and stir around to get the flavor from the onions off the bottom of the pan. Add in broth and thyme and simmer until slightly reduced.
    Turn on oven broiler. Slice baguettes in half and lightly toast each half. Remove them from the oven and sprinkle a light coating of cheese over each half. Divide the caramelized onions between the baguettes spreading them over only the bottom halves. Leave sandwiches open and return to the broiler and cook until the cheese is bubbly and just starting to brown.
    Place the tops of the baguettes onto the sandwiches and slice. Serve with a small bowl of the broth to dip into.

    Ok.. there you go again another fabulous food eat...it's never good to watch videos like this before I go the the grocery store ...this sandwich made me hungry and going to the grocery store hungry is not safe!! Ha .thanks Em for another delicious treat!!
