My grandson and I took jams & preserves to all the neighbors today🎄 He decorated the paper lunch bags, we loaded up the stroller & off we went. What beautiful memories! Thank you for all you do💕

A faster way that you can make your fig jam is to thaw them out in the bowl on the counter. Break them apart with your squisher and add your sugar and lemon juice and stir. Cover tightly and let sit for 2 hours, stirring every 15 minutes. That releases all the natural juices and then all you have to do is cook them until thick on the stove top. Makes for a better tasting fig flavor. I also add lemon zest too. I do all my jams and preserves like that when before I went straight from freezer to stove like you. The natural flavor is so much better.

First, figs come in all colors depending on the variety of fig tree. Your figs look like a green ischia fig. The same recipes can be used for all varieties. The rule of thumb is to measure your figs in cups, then add 1/2 the amount of sugar. Optional, add 1 or two thinly sliced lemons or an orange. Additional options are to add cinnamon and nutmeg to taste. Other flavors are to add flavored jello to give you strawberry figs, peach figs, etc. I added pomegranate juice to a batch of preserves for a change of taste. Figs are extremely versatile.

Just made your fig jam. Only thing I did different was added a few cayenne slim peppers, one small jalapeño. It came out delicious!!, yum. Not spicy hot but just had a little kick to it. I only had 3 1/2 pounds of figs so I only used 4 cups sugar, 1/4 cup lemon juice. Delicious!!! Thanks!!!❤😘🙏🏻✨

I just started growing figs last year and made jam with orange slices, which gave it a great taste. They're starting to ripen again now, and my first recipe was brandied figs, which are really pretty and amazing for desserts, sauces and gifting! My main figs are dark too, so the jam is dark

I love to make fig jam and preserves,I put my figs and sugar in a large bowl cover and let sit until the sugar and juices from the figs disolve. Then I cook my jam .Also I add a little vanilla to it, if you haven't try that you should give it a try very good. Also you can add a box of jello gelatin any favor you like and completely change the flavor of the figs.I like raspberry and when I make it like this, it taste just like raspberry jam .You might already know that I thought I would mention it just in case.❤️😀

We grow lots of figs in our area so canning figs is very common. I put as many figs in my large crackpot as I can fit, a few cups of sugar and a little water. Turn them on and only stir about once an hour. I use mine mostly for fig tarts so I like them to get soft enough to give them a decent mash. If you want variety, you can add a packet of strawberry jello for a different flavor. Fig cake with pecans is also a favorite. Moist but chewy. Hope this gives you some ideas.

Look up the canning recipe using Jello. I don’t like figs at all. We just moved into our house a couple years ago. A neighbor told me about the recipe. It’s the best preserves I’ve ever tasted. I loved the strawberry jello added in. My husband loved the raspberry. It was absolutely delicious. Think my recipe did ask for 12 cups sugar. I said no way I’m putting that much sugar in there. I put 8 cups & it was real sweet. Think I’m going with 6 cups this year. Plus we’ve covered our trees with nets to keep out the crows. They’re loaded with figs. I bought two more Texas Everbearing Fig Trees. They’ll produce twice as many year. I ended up giving our kids each a pint. We are so excited about canning them again this year. First year the crows got them. Not anymore. At least try it I think you’ll love them.

Your figs looks a little green. We always let ours get a little riper. If frozen, we put them in a pot, add sugar and leave them overnight. The sugar will pull the moisture from the figs and all you have to do the next morning is to cook them, No water needed! I always add a 1/2 teaspoon of salt to mine and a little vanilla.

Gifting the jam is a great idea. But the biggest loss to u is the jars and lids . So what my mother do with jams is that she will reuse any glass jars we have ( from store bought salsa etc ) and she pour the jam while it’s hot in it , then flip the jars upside down and keep them on the counter over night . The bottles will seal enough to keep in the fridge for months. ( the lids should be the one with seal buttons ) . It’s a great way to gift people plus it saves u canning jars and they all can afford storing one or 3 jars in their fridge with no problem

I hope that you'll take this comment with the intention with which it is made. It might be a good idea to mention that you are not providing an instructional video. I was concerned about the headspace in your jam recipe and the fact that you're jars were not immersed by 1 to 2" below the water level in your canning pot. This is Dangerous. I am a master food preserver with the University of California extension program. I really enjoy your videos. You are lively and thoughtful and very entertaining. Nonetheless, having so many followers and people looking for how to do things, it becomes your responsibility to make sure that people understand that they are really virtually "visiting" you in your kitchen and not learning from you as an expert.
