How to Make Caramel Marshmallow Bunnies for Easter | RECIPE

  • Today we're making easy homemade marshmallows that look like Easter bunnies! These are caramel marshmallows, made by caramelizing the sugar base ever so slightly to create the most delicious flavour EVER. Want to make it even better? Use vanilla bean seeds instead of vanilla extract! It will make them taste unreal. RECIPE & PRODUCTS USED LINKED BELOW!
    Caramel Marshmallow Bunnies Recipe
    INGREDIENTS (makes five 3” bunnies)
    2 ½ tsp powdered gelatin
    1/3 cup cold water
    1 cup sugar
    ¼ cup cold water
    seeds from 1 vanilla bean (or 1 tsp vanilla extract)
    Orange and brown gel food coloring (optional, I didn’t use any)
    Cooking spray
    Sugar coating:
    ¼ cup corn starch
    ¼ cup confectioner’s sugar
    DIRECTIONS
    1. Pour 1/3 cup of cold water into the bowl of an electric mixer and sprinkle the powdered gelatin on top. Let sit for 5 minutes.
    2. Place the sugar and ¼ cup cold water in a small pot and set to medium-high heat. Stir until the sugar has melted.
    3. Attach a candy thermometer to the pot and boil the sugar until it reaches 238F. Watch the sugar until it just starts to brown. It may start browning in just one area, but once that area is a caramel color, immediately remove the pot from the heat. We want the sugar to develop a caramel flavor, but we don’t want to overheat it to the point where it gets too dense to form the marshmallows. Brush the sides of the pot with a wet pastry brush if sugar crystals stick to the sides. Remove the pot from the heat and stir until the sugar stops boiling.
    4. Add the hot sugar to the gelatin and stir the mixture by hand whisking for a few minutes to slightly cool. Then beat with an electric mixer on medium-high speed for 8-10 minutes, until soft peaks form. Add the vanilla bean seeds or extract and mix until combined. If you would like the marshmallows to have a more caramel-like color, you can add a tiny bit of orange and brown food coloring.
    5. Spoon the marshmallow mixture into a piping bag and snip off the end, to create a medium-sized hole.
    6. Spray a rabbit mold generously with cooking spray. Pipe marshmallow first into the tail and ear portions, then pipe it into the rest of the body.
    7. Leave the marshmallows at room temperature for 6 hours, or up to overnight, until the surface of the marshmallows is no longer sticky and the marshmallows have firmed up.
    8. Gently unmold the marshmallows and set them aside on a plate that has been lightly sprayed with cooking spray. This will prevent them from sticking to the plate.
    9. Combine the corn starch and confectioner’s sugar in a small bowl. Sprinkle some on your work surface and sit the rabbits on top. Place some more sugar mixture into a mesh sieve and dust over the top of the rabbits. You may need to rotate them in order to get sugar on all sides.
    10. Place the rabbits one at a time into the empty mesh sieve and bounce them a couple times until the excess sugar has been removed.
    11. Enjoy your bunnies! To store, place them in an airtight container and consume within 1-2 for ultimate freshness. For an extra touch, you can dip the marshmallows in chocolate for chocolate-covered bunnies!

    I just finished watching the Halloween episode of the Great British Baking Show where they generated crime-against-nature s'mores. I was like, "Pankobunny makes better marshmallows", then came back to this video.
    I think you could make better homemade s'mores than Paul Hollywood. At least s'mores that don't have the sins of digestive biscuits and ganache - and definitely with your powdered sugar/cornstarch abilities you could make more consistent marshmallows.

      You could try melted chocolate! But I'd do that before dusting them in the sugar coating, because it might not stick :)

    I have the mold and my marshmallows taste great, good texture, but my bunnies do not come out smooth. They are marred. I’ve tried several batches and basically have the same outcome. Any suggestions? Thank you!

      Oh no! By not smooth, do you mean the texture on the outside or the inside? If it's just the outside (shape) of the bunnies, maybe try spraying the mold with extra cooking spray before adding the marshmallows. And do you use a piping bag to fill the mold? That might help if the marshmallow isn't getting into all the cavities. If it's not smooth on the inside, maybe try a different brand of gelatin. I've found a difference in my baking results when I've switched brands. Otherwise, try another marshmallow recipe on my channel. It's the same base recipe, but I cook the sugar for slightly less time. See if that makes a difference? I posted a matcha marshmallow recipe in January 2021 and just omit the matcha powder and see if that works.       @@pankobunny thank you SO much for your response. The inside of my marshmallow is fine. It is the outside that is pitted and blemished. I am piping to fill the mold. I have tried spraying the mold more heavily but it still didn’t solve the problem. I did try a different gelatin. I have made marshmallows for several years and used different recipes. I do like your recipe and have used it with great success without using the mold. I don’t do Facebook or Instagram. I am a senior citizen and not computer literate at all. Sorry. Thank you so much for sharing your suggestions. I’m not giving up. Will keep trying!

    I tried these and they are so soft and taste great but….. my bunnies were not smooth. They were very blemished, pitted and unattractive. Any suggestions? Did I beat too long? Thanks for help!
