🥫 Vietnamese Nuoc Cham Dipping Fish Sauce Recipe for Spring Rolls, Egg Rolls, Banh Xeo, Bun Com Rice

Fish sauce for dipping in two ways: regular and thick. Great for egg rolls, spring rolls, grilled rice/vermicelli dishes, and my banh xeo tacos!
It was a challenge to find the right thickening agent for this recipe. From testing arrowroot to xanthan gum.. tapioca flour was the clear winner (no pun intended). This starch makes for a robust thickener that stays clear without any off-flavors.⁣⁣
