I cut large chunks of fresh ginger, place in half pint jar, pour sherry to cover and store in fridge. As the jar empties I refill with more ginger or sherry as needed. Sometimes I use some of the infused sherry for salad dressings or sauces
Love Crystelle! Maybe a safer way to peel the ginger is to use a teaspoon....I teach cooking classes for kids and this is the method I teach them...also you can simply grate the ginger, skin and all. :)

I wonder if some paneer - maybe marinated and fried - would be a nice substitute for the cheese that’s normally on Mexican nachos. Or be used to make it vegan.

Paneer is made from milk. Therefore, using it in place of the chicken might make the dish vegetarian but not vegan.

Kashmiri chili powder is not spicy in the least bit - try a little on your tongue and you won't taste any heat. It's only added for color.
