Looks super delicious Katherine and so healthy. How many minutes do you boil the lotus root to keep the crunch. Will it go soft if you over boil?
it depends on how thin the lotus roots slices are, I cut it pretty thin, after the water return to boil again , I keep it in the boiling water only for a few seconds. and yes, if you over cook it it will go soft.
