Bake with Me! Rubber Duck Meringues and a Bathtub Cake

    My rubber duck meringues video was my most popular video on TikTok. Since I posted it, I’ve gotten so many requests to make a bathtub cake to put them on. You can probably tell I’m an amateur cake decorator at best. 😅 There’s room for improvement for sure, but I had fun!
    I’ve listed the recipes for the blueberry filling, Joconde (almond sponge cake), and white chocolate ganache below. Someday I will do a proper meringue recipe tutorial, it deserves its own dedicated video.

    RECIPES
    Blueberry Filling:
    • 2 TBSP corn starch
    • 100 grams granulated sugar
    • 1/2 cup water
    • 1 tsp lemon juice
    • 255 grams blueberries
    1. Add cornstarch and granulated sugar to a pot. Whisk until there are no clumps of cornstarch.
    2. Add water and whisk until sugar and cornstarch are dissolved.
    3. Add blueberries and turn heat to medium, stirring occasionally.
    4. Heat until mixture has thickened, then set aside to cool.
    Joconde (Almond Sponge Cake):
    • 6 whole eggs (300 grams)
    • 6 egg whites (180 grams)
    • 200 grams almond flour
    • 200 grams powdered sugar
    • 50 grams all-purpose flour
    • 42 grams butter, melted
    • 40 grams granulated sugar
    • ¼ teaspoon (.75 grams) salt
    1. Preheat oven to 400°F. Spray two 9”x13” with cooking spray.
    2. Whip 180 grams of egg whites until frothy. Gradually add the sugar while continuing to mix, then whip egg whites to stiff peaks. Set aside.
    3. In a separate bowl, beat almond flour, powdered sugar, salt, and the six whole eggs with an electric hand mixer until mixture is light yellow and fluffy.
    4. Sift in the all-purpose flour and fold until just combined.
    5. Fold in the melted butter.
    6. Fold egg whites into the batter until just combined.
    7. Divide batter evenly into prepared pans.
    8. Bake for 10 minutes and cool completely.
    White Chocolate Ganache
    • 170 grams white chocolate
    • 100 grams heavy cream
    • Wilton Cornflower Blue gel food coloring
    1. Break chocolate into pieces and place in a bowl. Set aside.
    2. Add heavy cream and a toothpick swirl of food coloring to a saucepan. Heat until hot but not boiling.
    3. Pour hot cream over white chocolate and let sit 4-5 minutes.
    4. Stir ganache until smooth.
