I'm a pasty Irish girl good with potatoes and red meat. This is my favorite stew by far and my husband taught me how to make it.
Do not add vinegar, it's no longer sauteed munggo. You can use chili leaves or spinac You can also cook lentils and green split beans like Ginisang Munggo.

A lot of these recipes where discovered because humans were creative in making their food taste more than edible. If everyone sticked to the authentic recipe then we will forever have salted meat as our dinner. Cooking should be fun and not something to be gatekeeped.

In my country we use only the bigger beans, we actually don't have small and green hard beans. We cook it similarly in one receipt. We use pork ribs mostly, instead of the leafs you added (we don't have them btw) we use green parsley to garnish. And if it's winter we usually use some canned tomatoes or tomato paste. But I know how to cook yours also, I just use spinach leafs. My husband is Asian.

substitute the rice water with coconut milk (coconut MILK not coconut water) and replace ampalaya with spinach and that's how cebuanos eat it
