    I got back from Rhodes yesterday and I can honestly say this was the best dish I’ve ever tasted in my life I’m leaving it right now 🤤 plus they added feta cheese to mine

    The only thing missing was a good kefalograviera or kefalotiri cheese.. Nonetheless this is a wonderful recipe and very well executed. Like we say in greek μου τρέχουν τα σάλια. Literally means makes my mouth water. Fantastic!

    great dish ... question: how much of liquid was there after uncovering since you added the beef/veggie broth? good amount for a reduction afterward?

    I love lamb but don't have a lot of good recipes besides grilling. This dish seem so easy to make. Will definitely try. By the way, love your kitchen design.

    Could I use red wine instead of white wine (Don’t have any) if not what would be a good substitute for white wine? I’m nervous never made lamb before 🤞🏽😊🤞🏽

    Boneless? Never had that, but surely it's cracky... NJ was my go to for lamb, but here in Buffalo I'd have to hit Toronto for proper cuts 😋

    Look great and deliecious but i have a question, why not just using a pot with a cover? Is using the paper is better? Whats the differences? Either way, great video and recipe!

      Not only does parchment protect your pan and for easy clean-up, but when you envelop meat in parchment paper before roasting, it traps the heat and moisture, creating a steam pocket that helps the meat cook gently from the inside. The result is meltingly tender lamb that is never dry!

    The food looks good but I don’t know where you got your recipe or facts as all are wrong. Klefti is Greek for thief hence calling it kleftiko. Thieves bandits hid in the mountains and often used to sneak down at night to steal a sheep. They killed it and rode off with it until they thought they were safe. They dug a big hole in the ground filled it with wood and set fire to it, cut the lamb into large chunks tied with string and covered it with earth. They were often chased by police or villagers. Closing the hole put the flames out and the meat cooked slowly from the heat of the burnt wood. In modern times lamb is cut into large hunks, tied tightly with string and cooked on the bottom of special brick ovens. The ovens are filled with a lot of wood which is left to burn out. The meat is then put on the bottom of the oven, a metal door is put into place in front of oven and sealed with mud or clay. It takes a couple of hours or more for the wood to heat the oven and several hours for meat to cook. No oil veg or seasoning although salt is sometimes added and potatoes in which case it’s wrapped in foil.
    Greeks do often cook lamb or goat in a indoor oven wrapped or covered with foil and add veg etc but not oil, Greek lamb is very fatty and I’ve never seen mustard used but each family cook to their choice.

      Not strictly Greek either. It's a Cretan dish. I tried ordering it once in Athens and the restaurant had no idea what I was talking about. They had never heard of it.

    probably would still taste good wouldn't it?
    Looked on your website it didn't say how much was that lamb as far as how many pounds or what it was it wasn't a shank that's for sure but if you go to the butcher meat market what size was that and how many people did it feed?

      You can omit the onion if necessary. 1 boneless leg of lamb, about 3 ½ pounds. This will serve about 8 people!

    This is NOT kleftiko,mustard ??? No no no,fir all watching this is totally wrong, I'm cypriot and this is not hiw we cook it,ingredients wrong,No bell pepoers,no mustard, no wine,.
