You can use lettuce if you don't have spinach. 🙂
Oh! BUT you want to make sure that it isn't subjected to the heat for very long, or else the lettuce will cook. You want the lettuce to still keep a little of it's crispiness. Unless, of course, you use kale. Kale is often cooked, but not other lettuces. Regular lettuce doesn't taste very good when it's cooked (IMO).

My stepson loves mushroom spinach pizza. And he loves cheese quesadillas. I’ll combine the two flavor profiles and use my panini press to cook them.
