If you want to make 100% authentic Taiwanese oyster noodle, you can use Taiwanese black vinegar(for example:工研黒醋) . It's tasted very different from Chinese vinegar.
I will never understand why I continuously watch cooking videos of things I more than likely wouldn't touch. Oh wait, it's because it looks amazing and I'm curious. Lmao. I might not like oysters but the noodles sound amazing. Would probably make the noodles by themselves
I made this tonight it was easy to follow your recipe and it was delicious. My Chinese wife liked it too which pleased me because she’s not a fan of my Asian dishes, Lol. Btw I got small oysters at Whole Foods.
I was an exchange student in Taipei back in 2008/2009, and took my husband there for our honeymoon last year. I really like Taiwanese xiang chang and a-gei. I'm so sad I can't get xiang chang in the USA.
this is one of my favorite dishes and reminds me of Taipei. I make it a couple of times a year, but it's hard to find good fresh oysters, so I use shrimp and fish instead. The flavor Taiwanese oysters are quite different and have a different flavor, but it's impossible to get it on the east coast.
Thanks for sharing this recipe. For some reasons I like the pig intestines version more than oyster. I know it sounded gross but the flavor and the chew is more satisfying in my opinion.
