Another variation was pork intestines only sans oyster. Taiwanese cuisine was one of my must tries if I were to travel there. Maybe you'll make some XL fried chicken or their ever famous beef noodles next time.
Looking for "red noodles" one might search for "红面线". In Vancouver (or perhaps Canada in general? not sure) at stores that carry ingredients from Taiwan (or maybe just T&T Supermarket?) you can also find "蚵仔麵線" = "oyster noodles". These are basically the right noodles plus dried packets of cuttlefish stock and chalots, then you add your own oysters and pig intestines. The good packets have very nice, seemingly "fresh" noodles (not dried up like instant noodles, they are still flexible). The packet we've tried (the brand is 古早) makes a very nice soup stock, though it is nice to add fresh onions. For me having the right noodles is the most important part. That particular brand is supposedly "hand made" noodles (though hand made obviously varies a lot in meaning depending on who uses the term).

The small oysters are over cooked after cooking so long and you eat it with a chinese soup spoon not chopsticks!

why dont you fry shallots in bulk They keep a long time. Slice thinly, sprinkle tapioca starch flour , mix and fry in hot oil
