My Mom was big on sweet pickle relish & pimento in her potato salad. I don't make it often but I got lots of compliments when I used, sour cream instead of mayo, finely diced apple instead of sweet pickle relish, mustard, salt & pepper, topped off w/smoked paprika. I use Pimientos celery onions and sliced black olives in it also but I use Avocado mayo, a little mustard and a little celery salt, paprika and sweet relish too
I cut my eggs like that too, but not my potatoes. I never thought of putting pimentos in it, but will give it a try. I use regular paprika, but will try the smoked too. Thanks for the tips. It looks yummy.

They use to put the pimentos in the sweet relish, or u could use hot dog relish! Its hard to find it mix with the relish anymore! I use mayo/ miracle whip combo. I do put mustard in my potatoe salad! Eggs mixed in, and layered on top, covered with paprika! Yummy

Potato Salad Recipe:
5 large potatoes
7 eggs
Half of an onion chopped
3 celery stalks chopped
3 tbsp pimento chopped
1 1/2 cups Miracle Whip Salad dressing
2/3 cup sweet relish
Salt and pepper to taste
Smoked paprika for topping
pickle juice was my grams secret ingredient. :)
