KETO CARAMEL SLICE | My favourite keto dessert!

- This is my favourite keto dessert recipe! It makes the most delicious caramel slice that tastes exactly like a regular caramel slice!
To make the base:
1. Preheat your oven to 180C/350F and line a baking dish with baking paper (parchment paper).
2. Combine 60g butter (melted) with 180g almond meal (or almond flour) to make your shortbread base.
3. Press down into the baking dish. Use a fork and prick the base with the fork to make sure it cooks evenly and doesn't bubble up.
4. Cook until golden brown (approx 10-15 mins).
5. Once cooked let it cool as you make your caramel.
6. Combine 250g butter, 1 cup cream, 5 tbsps keto sweetener in a saucepan.
7. Cook these ingredients on a medium - medium/high heat to create your caramel.
8. It will take 20-40 mins for the caramel to come together, so stay patient and wait for the colour to change!
9. Once the caramel has "thickened" pour over the base and allow it to cool.
10. While the caramel is cooling, make your chocolate top: combine 200g keto friendly chocolate (your choice) with 2 tbsps coconut oil.
11. Melt and pour over the base.
LET THE CARAMEL SLICE COOL, CUT INTO SERVING SIZES AND ENJOY! I store my caramel slice in an airtight container in the fridge!

@@ElleHerself I've never made caramel before so this took me a couple times to get right, but I redid the caramel this morning and WOW! Hands down the best keto treat I have ever made. It taste just like a candy bar but better

Somehow my caramel split beyond repair. So I mixed it with some whipping cream with an emulsifier blender, pour it over the base, topped with chocolate and baked chopped walnuts and froze it. Now it's a caramel ice cream cake. It still tastes delicious though.
Oh no!!!!!! I’m so sorry that it split! I’ve been told that if you add a splash of cream and stir it really quickly on the stove that it comes back together 🤞🏼 but your creation sounds DELICIOUS 😍😍

After 40 minutes cooking the caramel split - don’t waste your ingredients. Maybe just butter and sugar together melted first and then add cream?
Exactly what just happened to me... wasn't on low; I stirred it for a LONG time on medium, but then all at once, it split. I just strained all the melted (what is now just the oil of the butter) stuff off and spread what was left on the crust. The caramel will probably be chewy, considering what I strained off looks like MOST of the butter! I'm sure it will taste great though, soooo... Next time, I'll just make caramel another way!

Has anyone had trouble after the Carmel was thickening starting to scorch in the edge of the pan? Mine did so I kept stirring rapidly to get it to

You can just leave it out if you’d prefer ☺️ or add butter instead

This is great except the chocolate you used I'm pretty sure isn't keto????? You can get stevia sweetened chocolate online though!

How does a non stick pan cause it to stick?
It causes it to split (has been others experience). I’m just sharing all of the possible reasons why the caramel may split and that one has been passed onto me by many others 😊
@@ElleHerself lol I went and bought a tin to make this and it's non stick lol. Will have to use something else. Would a glass oven dish be ok?

😭😭😭😭 I’m so sorry! Did you try adding a splash of cream in?!
@@ElleHerself Would that make the butter blend back into the caramel? When mine split, it was like a pan of ghee with a bit of caramel in it. I strained what little bit was caramel out and the rest is probably pretty close to the amount of butter that I started with, so in truth...it really is ghee! It tastes great, so I WILL be using it. For what, I don’t know, but the only thing I did different was use Allulose. Until I find out if Allulose was the cause, I am hesitant to try it again. It wasn’t horrible, but it had very little caramel, so mostly crust and chocolate.
I think you need to have better instructions. By reading the comments many people stuff up on the caramel. Maybe it splits because it is left on too long. Better explanations and tips is needed in the video and description so that people don't waste food and these ingredients don't come cheap either.
