INSTANT POT NEW YORK STRIP STEAK

- In this video I show you how to cook a New York strip steak in the Instant Pot. A perfect steak every time with less work and time.
Shopping List:
(1) New York strip steak about 1 lb. about 1 1/4-1 1/2 inch thick
Kosher salt and course black pepper to taste (be generous)
2 tbsp. salted butter
2 tbsp. regular olive oil (not extra virgin)
1 cup cool tap water.
Directions:
Remove the steak from packaging and let sit at room temperature for at least one hour.
Once at room temp, pat the steak extremely dry with paper towels to remove all moisture. A cold steak will not cook evenly and a wet steak will steam rather than sear.
Apply a thin coat of olive oil to the top, bottom and sides of steak then season generously all over with salt and pepper.
Bring a cast iron skillet over medium high heat to about 450F.
Add the oil to the skillet then sear the top, bottom and sides of the steak. 2-3 minutes each will do.
Add the water to the pot and use a wooden spoon to scrape the bottom to deglaze of any stuck on bits. THIS IS IMPORTANT!
Add the trivet to the pot and place the seared steak on it.
Replace the lid making sure the pressure valve switch is in the seal position.
Press the pressure cook/manual button and adjust to high pressure. Select cook time for 4 minutes for medium well and 3 minutes for medium rare. This may vary depending on the thickness of the steak.
When the cook time display reads 0 do a quick release by moving the pressure valve switch to the vent position and wait for the lid pin to drop before removing the lid.
Once all of the pressure has been released remove the steak and allow to rest 5 minutes before slicing. Add pats of butter at this time.
Slice and serve.

Yeah. I normally like steak medium rare, but some times I'll make it medium well like my dad liked his. I think because I wanted to dip in ketchup. I don't use ketchup on my medium rare steaks. nfor watching.
I mean is it worth it? You can just cook it a few more minutes on each side and be done?
Yes it’s worth it. You won’t believe how all meats come out more tender by pressure cooking than conventional cooking. Even brisket, which is a tougher cut of beef. Where it takes about 13ish hours to get brisket tender, it’s 1:15 in the Instant Pot and it just falls apart. Thanks for watching.
