Colossal Half Pound MD Style Crab Cakes

- Chef Frank showed you how to make this super sized version of his signature crabcake recipe. These are authentic Maryland style crab cakes.
RECIPE
1 pound COLOSSAL lump crab meat
1 mayo
1/3 cup plain bread brumbs
1 1/2-2 TBSP Old Bay
1 TBSP yellow mustard
2 tsp Worcestershire
1 egg
2 TBSP freshly minced parsley
1TBSP lemon juice
Crab Mix
Combine mayo , FRESH lemon juice.
OLD BAY, egg, yellow mustard, Old Bay and Worcestershire
Crab meat prep
1. Drain crab, remove moisture by gently squeezing the crab meat.
2. Add bread crumbs and fresh minced parsley
3. Add 3/4 cup of crab mix...1/2 cup first to make sure they don't get 2 wet.
4. Combine gently with YOUR HANDS, try to keep your lumps in tact.
5. Form crab cakes by gently rolling and tossing the crab meat with your hand.
6. Sprinkle lightly with paprika and melted butter
7. Bake at 400
for 12-15 minutes.

I live in Harlem NY but born and raised in Baltimore and yes this is how you make crab cakes. It's extremely hard if not impossible to find authentic Maryland crab cakes so when I want crab cakes which is all the time. I use your recipe. Thank you

Sir, this is, without a doubt, the best, most accurate recipe for a Maryland crab cake. One minor complaint though…I would use ritz cracker crumbs instead of panko. I prefer Dijon mustard but yellow is more authentic. Either way, you killed it. Thank you, & God bless.

Made this tonight. Great recipe. Only thing I changed was using club crackers instead of bread crumbs
Good call! I think traditionally, the Maryland crab cakes are made with those "buttery-type" crackers or ritz crackers

I tried your recipe and we're I live this is a staple I live in the crab capital of the world and have had some amazing crab cakes you sir did a great job did maryland proud lol even though crab meat out of a can is a cringe thing to see lol

Tweedle cannot say enough - this one gets a 12.5, and it would be a 13 if I could smell it. No telling the score if I could eat one of these. No idea where to find colossal lump crab though. Philips doesn't make Jumbo lump crab meat from top to bottom here in Massachusetts.

For sure, I hope to add wine reviews to the channel later this year. Chardonnay is rarely my go to white wine, but in this case a dry balanced Chardonnay will pair perfectly. Here are a few recommendations that are off the beaten path...

That crabmeat isn’t Maryland blue crab. Phillips doesn’t use Maryland meat. Look at the can

i'd skip salt and watch how much old bay you put, these canned crabmeat got salt in them already.
Those crabs are from Asia. The best crabs come from Maryland.
