Sandra Lee - Pesto Chicken Panini

Ingredients
• 1 (16-ounce) package chicken tenders, rinsed and patted dry
• 1/2 cup prepared pesto
• 1/2 cup mayonnaise
• 1 (16-ounce) loaf ciabatta bread, sliced in half horizontally
• 4 slices pre-sliced mozzarella
• 1 cup baby arugula or spinach, rinsed and patted dry
• 2 tomatoes, sliced
• 15 fresh basil leaves
Directions
In a plastic bag, combine chicken tenders and 1/4 cup of pesto, set aside and let sit for 15 minutes.
In a small bowl, stir together 1/4 cup pesto and mayonnaise. Spread mixture on both sides of ciabatta; set aside.
Preheat an oiled grill pan over medium-high heat. Grill chicken tenders 5 minutes per side. Remove and let rest for 5 minutes. Turn the heat down to medium and re-oil the grill pan.
Place cheese on both halves of bread. Add arugula, then tomato, then basil leaves, then pesto chicken to bottom piece. Top with top half of bread. Place onto the grill pan and place a heavy pan on top of the sandwich. Grill for 3 minutes per side or until cheese starts to melt.
Cut into 4 portions and serve. - Хобби
You know that tomato that fell out of the panini pissed her off to no end because it wasn't scripted. Ha it also didn't go with the table scape.
The sandwich looks dry. She even made the mayo look dry, I don't even know how that's possible, but she did it.

Not gonna lie, I usually watch these just to be appalled or laugh but honestly, this is one of her better recipes, I would totally make it. Plus "store-bought pesto" is very convenient versus everything else she uses.

Michael Persico .... marinades don’t have to be acidic. They can also be enzymatic. Pesto is not enzymatic though lol
I actually just made this sandwich... and oh man, it's really good. The only thing I did differently was make my own pesto (nut allergy!!), but it was all really good. Nice one, Aunt Sandy.
I can't say that all her videos are great (they're entertaining though!) but she sure knows how to do a good chicken pesto panini. Deeelicious.

Surprisingly edible for Aunt Sandy. Good job. Little iffy on the pesto mayo, but it would probably taste fine. Better if the pesto was from scratch though. She even already had the basil.
She doesn't do anything from scratch. Her whole concept 'Semi-homemade Cooking' utilizes processed and prepackaged foods for convenience and inventing ways to prepare quick, thrown-together meals so as to pass them off for meals that were laboriously prepared. The concept is appealing but most of her recipes are crap.

I'm not gonna lie... out of all of Sandra's "russipies", this one seems the most appetizing to me. I'd eat the shit outta that sandwich.

(I realise this reply is 3 years late but...) she says what's in pesto twice since her recipes would be scattered throughout an episode. This channel has put them together into single videos, so the two segments could've easily been split by a commercial break or other recipes.

I love how she just has basil growing in the fridge. I can only suspend my disbelief so much.
This is the only thing she's ever made that looks pleasantly edible.
Recently I've gone on a bit of a pesto kick because damn that stuff is great, and I like me a good sandwich as well, so naturally I've made a few sandwiches with pesto. One of the sandwiches I made I put mayonnaise on the bottom half of my ciabatta roll and pesto on the top (we just so happened to have ciabatta, I swear I wasn't thinking about this horrid russipe). I can say for a fact that mayonnaise and pesto DO NOT go well together. It creates a disgustingly creamy texture and their flavors don't compliment each other AT ALL. They clash, actually. Don't ever try it for yourself, you'll only regret it.
Mustard pairs much more nicely btw. I used a dijon or stone ground (I don't quite remember) but really whatever kind is your fave will give the best results.
flylikeabeetv pesto aioli (pesto mayo) is a VERY common ingredient at restaurants and bistros, especially on chicken or turkey sandwiches. It doesn’t clash either. It’s quite delicious. Maybe you have bad mayo or pesto!
I quite like pesto and mayo together. I think they go well together on sandwiches. I prefer pesto on its own for the most part tho
BASIL IS NOT A SUBSTITUTE FOR LETTUCE
In a panini it’s better actually. Lettuce gets too soggy and has no flavor. Honestly you’re just nitpicking.

@@goneawaysadly5135 Neapolitan lasagna is absolutely made with mozzarella and ricotta. Lasagna al forno is made with bechamel. The former is more popular outside northern Italy.

I actually give her credits on this one for using fresh arugula and tomatoes instead of incorporating some of her favorite dry chemical ingredients. This actually looks good
This actually isn't a bad recipe for her. Maybe if she didn't mix the pesto and mayo together as well as reduce the amount of each topping used, it would be even better. I have definitely seen much worse from her.

I'm sure Sandra is a lovely person and I'm not tryin to hate on her or anything, but my mom makes hella rad green spaghetti (with pesto) and we had to eat affordable too; I'm pretty sure ANY sort of homemade pesto is cost effective and much better than whatever it is she's using. I'm personally offended by that pesto. I didn't even get through the first minute before I had to pause and type this comment. I get that people are poor, I am also people who is poor, but dang guys...... Don't cut back on the pesto. That's horrifying. Save yourselves. Love yourselves.

I'm so late to this but pine nuts are really expensive. So is parmesan cheese and good Olive oil. Buying all those ingredients to make pesto would be hella expensive. This show is about using pre made store bought stuff. I think a little tub of store bought pesto is just fine here in a sandwich.
@@sophievanderbilt1325I agree! I cannot afford pine nuts, but I have substituted walnuts in their place & it still makes a fabulous pesto. It freezes well too! Store bought pesto is also delicious & I use it often (except Aldi's - it does not taste good to me at all 😂)

She cooked good enough to get a show... He premise was never 100% homemade. I don't hear none of these haters talking about their cooking show offers.... I made this because I do love pesto and was curious to see how it would turn out. It was awful. Pesto is too acidic.

Everybody's already criticized what I had to criticize, so now I'll say my one positive: I never actually thought of marinating chicken in pesto. It doesn't look great, but I'm sure it probably tastes fine, and if it was in a sandwich it wouldn't matter if it didn't look great anyways. But not with the mayonnaise. There's already oil in the pesto why do you need mayonnaise

I would totally eat the shit out of this sandwich. I would not, however, dump a shit ton of seeds on Pillsbury pizza dough and try to pass it off as authentic Indian naan bread.

@Michelle2815CV marinating in a ziplock bag just keeps the flavours and scents from escaping, doesn't make a big difference if it's only for 15 minutes, though
Also, it may look yummy but: ciabatta is a very oily bread, she's using cheese, pesto and mayonnaise on it which are all oily foods. Great balance.
Oh wait, I did think of something. I prefer focaccia for paninis. I personally don't like the crust on ciabatta or the dry texture.
