Sandra Lee - Tortilla Casserole

  • Originally aired as part of the "Bring the Heat" episode (Episode SH1204H) on the Food Network, September, 20th, 2008.
    Ingredients:
    • 8 corn tortillas
    • 1 1/4 cups chicken broth, divided
    • 2 tablespoons olive oil
    • 1 cup frozen chopped onions
    • 1 cup frozen chopped green pepper
    • 1 1/2 tablespoons minced garlic
    • 1 (8-ounce) package fresh sliced mushrooms
    • 1 pound ground turkey breast
    • 2 cups plain yogurt
    • 1 (15-ounce) can diced tomatoes
    • 3 tablespoons fine flour (recommended: Wondra Flour)
    • 2 tablespoons chili seasoning
    • 1 (15-ounce) can artichoke hearts in water, drained and chopped
    • 1 1/2 cups organic shredded jack cheese
    • 1/2 cup crushed baked tortilla chips
    Directions:
    Preheat oven to 350 degrees F.
    Place tortillas in a pie plate with 1 cup broth. Turn once in awhile to ensure all tortillas are soaked, set aside.
    Place a large nonstick skillet over medium-high heat and add olive oil. Saute onions, peppers, garlic and mushrooms for 5 minutes until slightly browned. Add turkey and cook until turkey is cooked through, about 7 to 9 minutes. Add remaining 1/4 cup chicken stock and remaining ingredients, except cheese and tortilla chips. Stir thoroughly and bring to a boil. Reduce heat and simmer for 5 minutes.
    Place 4 soaked tortillas in the bottom of prepared baking dish, tearing to fit. Layer half of turkey mixture and half of cheese. Repeat layers. Top with crushed tortilla chips. Place in oven and bake for 30 minutes.

      The thing is, it’s very possible to make great semi-homemade meals. Sandra just lacks any and all culinary skill and taste so she just can’t make anything good.

      I fully understand the premise of the show and who among us hasn't used premade food for cooking? We're not all able to spend 6 hours like Ina Garten. But there's just something so wrong about this. She's passing off shit as gold.

    I honestly like the concept. But I would change a few things. I would use onions, bell pepper, green chilies, guacamole, bean dip, cheese. Wait I’ve changed the whole recipe😂

    The basic foundation of the recipe is actually not too bad. However, since the meat mixture had a considerable amount of liquid in it, I do not see the need to soak the tortillas before placing them in the casserole. Also, I see no reason whatsoever for the artichokes. Those seem to be a very odd addition to this particular recipe. It's almost as if she threw them into the "test recipe" on whim, as though she had a can of artichokes in her pantry that were about to expire and she really wanted to use them up or something. Corn or black beans would have worked much better than artichokes, in my opinion. The mushrooms were odd as well, but not quite as much as the artichokes. Lastly, I would have skipped the yogurt and added sour cream to the meat mixture.

      Honestly, I agree. Her recipes aren't exactly very bad. She just has skewed formulas and most of her stuff is highly in her own taste and not in general taste. She also needs to stop using prepacked everything.

      I don't understand why she has the cans out in the first place. Every other cooking show has the ingredients measured beforehand in cups, bowls, or dishes, but we get gratuitous shots of her opening cans and throwing away garbage. Literally half the episode's content is prep work

    Even though her recipes don't look the tastiest, I will commend her for making quick recipes for those who may not have the time, energy, or ability to make a proper homecooked meal. As someone who is disabled and definitely lacks energy most days, I have to find crafty ways of making food without expending all of my energy on it.
    I don't know if I would honestly try any of her recipes but her idea is definitely unique and beneficial. The Kwanzaa cake idea was certainly cringe-worthy though...

      easy meals dont necessarily mean unhealthy? there are great ways and tips on how to make healthy easy meals. this is not it. she uses too much sugar,butter, heavy cream, sour cream dairy in all of her meals. prepackaged who knows whats in any of that stuff. its a gimmick but not a good way to eat. look for healthy easy recipes. they are out there. cooking and what you eat is about self care. there are other options out there.

    Aunt Sandy is the cook for lazy, rich housewives who don't have the patience to spend time over a stove. Anybody who knows anything about cooking will tell you pre-packaged, pre-sliced food is more expensive than just like, doing it yourself. Did anyone see that nasty color of those ugly peppers? They looked like the dead bits of grass left over from a lawnmower.

      I’m not lazy, rich, or a housewife, but I definitely take the easiest route when cooking because 1. I hate cooking, and 2. I’m tired after coming home from a full day of standing on a concrete floor at my job. It has nothing to do with patience. People are exhausted, some people are disabled and physically can’t spend an hour cooking from scratch. The lack of thought you people have for the world outside of yourselves is astounding.

    of sandras "russipees" this is ostensibly one of the more edible ones. losing the yogurt (?) and the artichokes(??), and not soaking the god damn tortillas (????), this is a perfectly ordinary casserole recipe. a little like something my late grandmother used to serve, actually.
    and see now, i actually think its perfectly acceptable to cook this way in some situations. (if youre, for instance, a college student or single parent curtailed on time, money or both; or a person with a disability who just doesnt have the spoons to chop, mince and dice every ingredient of your food. or, because intersectionality exists, all of the above!) but heres the thing: why would you televise this? people who watch cooking shows watch them because they love food and they want to learn how to cook better food, not be walked through making the same hamburger helper meals they already know how to cook. at its best*, this is subsistence cooking. its not worth showcasing.
    *at its worst, of course, you get incomprehensible abominations like the kwanzaa cake.

      You can't say that there's no use in a show that displays different cheap-o recipes to add to your repertoire. She's at least giving people new things to try. Same goes for her sequel show where she shows how to make meals on the cheap.
      That being said, she would probably save more money(And flavor) by just buying veggies whole and guiding the viewer through chopping things.

    Im 14 yrs behind. But i am for the first time in my life, the definition of gobsmacked.
    Like, I dont understand. We are assuming this is mexican inspired. Where's the salt, pepper, cumin, coriander, lime, jalapeño, onion. My god, the list goes on and on. You leave all that out and instead add artichoke and mushrooms and yogurt!
    Sandra Lee is a true fascination. How on earth did she get on TV? Who looked over her recipe book or ate her food and was like "Yes, this is the Food Networks next star!"
    Im on a deep dive of her content. So many shoots where Im screaming "WHY ISNT ANYONE SAYING THIS LOOKS UNAPPETIZING. MAYBE WE NEED TO RESHOOT. ARE YOU HAVING A BAD DAY SANDRA. OR DID YOU FORGET THE RECIPE?"
    Im truly baffled that the camera people and producers and directors shot this shit and was like "Cut, we got it."
    I really love her personality and confidence. She shoots her motherfucking shot. But nobody notices that it falls 5 feet short.
    Sandra Lee, where are you now? Id love to host you in my home and pick that beautiful, oh so chaotic, and plain baffling brain of yours when it comes to the philosophy of cooking. I think we could be friends and I think I could help teach you a few things around the kitchen. But man am I jealous of her confidence!

    Well, the idea is not bad, but a traditional tortilla casserole (or pastel azteca, as we know it in Mexico) has shredded chicken, sour cream and poblano pepper, instead of turkey, yogurt and artichoke. Maybe not using frozen ingredients would give a better result, but it looks like she has the amazing power to transform anything into disastrous dishes.

    I wonder if pastel azteca was the inspiration for this because it seems like a very 'loose' interpretation of it in true Aunt Sandy fashion. Pastel azteca is a legit tortilla casserole in Mexico, which is often thought of as a Mexican-style lasagna or layered enchiladas. It usually consists of layers of fried tortillas filled with shredded meat (often chicken, pork, or turkey) with strips of roasted Poblanos, corn kernels, salsa verde, sliced onions, Mexican crema, and topped with some sort of melting cheese.

    You're right, fair enough. But let's look at the ingredients on here: ground turkey (good), corn tortillas (good), bell peppers and onions (good), artichokes (wait what?), yogurt (uhhh....), flour and chicken broth soaking? Okay, I can tell you now, these flavors don't mix. Not to mention the textures! Mushrooms and artichokes against crunchy chips and gooey cheese? It would be a nightmare!

    She put frozen veggies in the pan and called them fresh, lol. Frozen veggies are not fresh. Canned veggies don't give fresh flavor. We need to put Gordon Ramsey in that kitchen so he can give her a reality check.

    I would have used corn tortillas instead of flour. Less carb, less chance for it to become creamy mush rather than just soft. Plus, you can cut some into strips and place them on top of the casserole instead of having to top it with salty chip shards.
    Well who am I kidding, I wouldn’t even do this casserole in the first place.

      Expensive relatively speaking. Especially if you're on a budget. A jar of decent artichoke hearts in oil at my grocery store is around $5-$6. Sometimes they will go on sale for about $3.50. For that price I could purchase six pounds of fresh string beans. Artichokes seem expensive to me.
