burnt onions turn not into bitter curry but the color of the curry . you should have been very careful , cooking is an art and no professional cook would risk their dish with the basic mistake .we know u didn't do it purposely .nobudy would go for a second morsel with this burnt dish. This is a flop handi video more focused into other things but not the dish

It's pretty hard to burn an onion actually. Whereas garlic can become inedible in a flash and with enough bitterness to spoil the whole dish.

I brown my onions like this myself as taught by mother for certain dishes, I've burnt onions twice, and you can tell when it is burnt by the horrendous smell and black/brown colour, plus if you tried eating burnt onions, it would taste like ashes. Browned onions on the other hand are a mix of onions that are dark brown to a deep reddish brown, like this one, and they add richness in colour and flavour to dishes where it is required.

firstly. don't wash poultry. definitely do not wash poultry. And for a healthier handi, just sub the ghee for olive oil. it won't affect the taste and its much better for you.

Olive oil has a very low smoke point and if you know the high temperatures Indian curries are cooked in, the olive oil will have smoked before you complete the frying. Also washing helps remove any remaining traces of blood, if present in the chicken, and helps thaw it quickly if you've taken it right out of the freezer. Is it harmful to wash in water ?

Rajiv Mohapatra this particular dish doesn't require the oil to be heated so much that it burns the hell out of it. you can achieve dark, caramelized and fried onions with olive oil. I suppose you can also use a flavourless oil like vegetable, rapeseed or groundnut as well. you absolutely should not wash poultry. Washing raw chicken before cooking it can increase your risk of food poisoning from campylobacter. Splashing water from washing chicken under a tap can spread the bacteria on to hands, work surfaces, clothing and cooking equipment.

Don't be ridiculous. I have been washing poultry for 30 years, never had a single case of food poisoning. So yes, do wash poultry.

Actually, Pradipta, unless you want to enjoy this dish once in a while, you have to use more ghee, I repeat GHEE. Sister, this is definitely not for the calorifiers. It's a dish to prepare for the hubby who will not want to look at another woman, Neelam, included

Great recipe thank you. I've added in a little tomato paste and coconut sugar to offset the tartness of the tomato paste - that's the Italian cook in me lol!
