- The viral brownies that literally started it all! To the hundreds of you who have made these brownies around the world, I love you, you’re forever special to me!
Servings: 16 brownies in a 9” pan
Ingredients:
- 1 oz semi sweet chocolate (28g)
- 3 oz dark chocolate (60-70% cocoa) (85g)
- 10 tbsp unsalted butter (140g)
- 3/4 cup sugar (170g)
- 2 eggs, room temperature
- 1 tsp instant coffee mixed with 1 tbsp hot water
- 1/2 cup all purpose flour (65g)
- 1/3 cup cocoa powder (best to use Dutch processed) (35g)
- 3/4 tsp salt
- 2 oz chocolate chips or chopped chocolate of choice (I mix milk and semi) (57g)
Method:
- Pre-heat your oven to 335F and line a 9” baking pan
- Melt the butter, 1 oz semi sweet and 3 oz dark chocolate in a microwave safe bowl, using 20 second increments in the microwave and stirring in between. Don’t overheat this mix
- In the meanwhile, whisk eggs and sugar on a standing mixer at medium-high speed until you achieve a light, thick & ribbony mixture
- Pour the chocolate & butter mix into the eggs and sugar and fold in gently
- Mix the instant coffee with hot water, and pour in. Gently fold
- Sift in flour, cocoa powder and salt, fold in
- Lastly, add 2 oz chocolate chips and fold
- Pour the batter into the lined pan. Add more chocolate on top if you’d like
- Bake for 20-25 min
- Let cool, cut & serve!!
Notes:
- Quality ingredients are key to getting the best brownies! I use @valrhonausa or @lindt_usa chocolate (you can use other good quality brands) and Valrhona Dutch processed cocoa powder
- Don’t skip the coffee! It really amplifies the chocolate flavor
- Take care not to overbake your brownies. Time can vary based on ovens, so you want to bring them out when they’re not completely liquid but they still have a jiggle & a toothpick comes out with slightly wet crumbs attached

This homemade fudgy brownie recipe is the best I've made.
I have my own, classic fudgy brownies,
Ingredients:
- 1/2 cup (1 stick) unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
Instructions:
1. Preheat oven to 350°F (175°C). Grease an 8x8 inch baking pan or line with parchment paper.
2. Melt butter in a medium saucepan over low heat. Remove from heat, stir in sugar, eggs, and vanilla.
3. Beat in cocoa, flour, salt, and baking powder until smooth and combined.
4. Pour batter into prepared pan and spread evenly.
5. Bake for 20-25 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
6. Cool in pan before cutting into squares.

- 2 tablespoons vegetable oil
- 1 1/4 cups white sugar
- 1 cup packed light brown sugar
- 4 large eggs, at room temperature
- 1 tablespoon pure vanilla extract
- 3/4 teaspoon salt
- 1 cup all-purpose flour
- 1 cup good quality, unsweetened cocoa powder
- 7 ounces roughly chopped chocolate or large chocolate chips
Instructions:
1. Preheat the oven to 350°F.
2. Grease an 8x12-inch baking pan with cooking oil spray and line with parchment paper.
3. In a medium-sized bowl, combine the melted butter, oil and sugars and whisk well.
4. Add the eggs and vanilla and beat until the mixture is lighter in color.
5. Sift in the flour, cocoa powder and salt and fold the dry ingredients into the wet ingredients until just combined.
6. Fold in 3/4 of the chocolate pieces.
7. Pour the batter into the pan and smooth the top. Top with the remaining chocolate pieces.
8. Bake for 25 to 30 minutes for a fudgier texture or until the center of the brownies are just set.

3. Add 4 eggs and 1 tsp vanilla; mix well.
4. Sift in 1/2 cup flour, 1/2 cup cocoa, and 1/4 tsp salt; stir.
5. Optional: add 1 cup nuts or chocolate chips
6. Pour into the pan, bake for 25-30 mins.

In the meanwhile, whisk the eggs and sugar on a standing mixer at medium-high speed using the whisk attachment for 3-5 minutes. You should achieve a very thick and ribbony mixture which is light in color. This step is important in developing the shiny crust of the brownies
Pour the chocolate & butter mixture into the egg and sugar mixture, and gently whisk at low speed until combined
Mix the instant coffee with hot water, and pour in. Gently fold into the batter
Sift in the flour, cocoa powder and salt. Gently fold the dry ingredients into the wet using a rubber spatula. Be careful not to knock out the air in the batter
Lastly, fold in the chopped chocolate or chocolate chips of your choice
Pour the batter into the lined pan and spread evenly. Add more chocolate chunks on the top if you’d like
Bake immediately for 20-25 min. I typically take out my brownies around 22 minutes
Let them cool to room temperature and cut them with a sharp knife

@@tarundasniper they were really, good. I didn't have any instant coffee, so I just put like two tablespoons of boiling water in with a tablespoon of normal grounds. Let that sit for like 30 minutes, then squeezed out some super concentrated coffee with a cheesecloth.
They were definitely fudgey and soft, but the coffee in the batter made it absolutely amazing. I've never made brownies with coffee before, and I cannot recommend it enough. The flavour is so much better than when I used to just use a little milk. It's like the chocolate is suddenly really rich, but not bitter. I'm a big fan, I'll probably never make brownies or chocolate cake without coffee again.
The batter was also a lot thicker than I'm used to, but it ended up being nothing to worry about. Even the corner pieces were still fudgey and soft. It was a really good recipe, my mom and aunties all raved about them, too.
