Servings: 10
Ingredients:
Graham Cracker Crust -
1 cup almond flour
4 tbsp Butter
1/2 tbsp sweetener
1/4 tsp cinnamon
Cheesecake Filling:
16 oz softened cream cheese
2 eggs
1/2 cup sweetener
Dash of salt
1 tsp vanilla extract
1 tbsp lemon juice
Directions:
1. Preheat your oven to 350F
2. Make your crust by combining your melted butter, almond flour, sweetener, salt and cinnamon.
3. Using your springform pan, pat the crust down until it is even. Bake for 10 minutes.
4. Now, make your filling. Add your cream cheese into your stand mixer (or bowl) and whip for a few seconds until combined.
5. Now, add the rest of your ingredients (eggs, sweetener, vanilla, lemon juice and salt) and mix until combined and silky smooth! This should be a few minutes.
6. Take your crust out and pour cheesecake mixture on top.
7. Bake for 45-50 minutes until it's cooked all the way through.
8. Take cheesecake out and let it cool for about 20 minutes. Place in fridge and let it set for 2-3 hours. Add your favorite toppings and enjoy!

What sweeteners do you use? I can’t find one that I can handle the after taste of.
For the crust - you can use any granular sweetener (I used monkfruit), however for the cheesecake filling, I'd recommend using a powdered sweetener - you can use powdered Swerve, powdered allulose, or if you have the granular one, just grind it in a blender or coffee grinder and make that powdered. This is crucial, because you don't want crystals in your cheesecake! For an aftertaste - allulose is probably the one that has NO aftertaste for me 💗
So which powder do you use for the cheesecake
@@kimsandoval440 You can use powdered confectioners erythritol, or you can take any granular sweetener, blend it in a blender or coffee grinder and it becomes powdered!

This was awesome, I made it and it turned out great. I wanted to mention a typo that is in the directions. Under number 2. it says to combine salt when you are making the crust. However in the video you don't do salt at the crust step and the ingredients for the graham cracker crust doesn't have it in there. It just shows up under number 2.in the directions section. Just thought I would mention it so others might not get confused. I had to watch the video a couple of times to make sure I wasn't missing something. Thanks for your videos, they are very informative.

I made it but realized I would need a small springform pan. mine came out too thin but it is tasty. I have to buy a 6-inch springform pan. The one I used was 8 inches. i love that it was easy to do and fast.

I tried this and added some sour cream. Didn’t have lemon 🍋. I used powdered swerve and added a bit more 😉 came out perfect.

Ooooooo now you're hitting me where my happy lives 😂. I used to feel guilty about having more than one slice once a year. It's my weakness. This past year on keto im happy to be able to have it to get over my monthly hump 😉😉 keeps me on track with zero guilt for that time. I still limit to one slice a day until its over. I just made this yesterday! The sweetnedd of the cheesecake relly was not there for me with the 1/2 cup for the filling. I added a little more to the batter and it tasted better but when we finally ate the whole thing after it cooled, it was not sweet really:/ I know its supposed to be a healthy keto cheesecake but maybe i did something wrong because it was not sweet after it cooled. The texture was perfect though!!

Line the bottom with parchment, that makes it easier. You can line the sides too, I just use a butter knife dipped in hot water ☺️

Coconut flour might work, but you would need to probably double the butter, since it's a drier flour.

Same temperature, just baked them for about 18-25 mins (but watch it because I know ovens are different)
