I’m not sure if there’s a salt-free version of preserved citrus because the salt acts as a form of preservation which helps keep the fruits fresh for a prolonged period of time. Although, you could try preserving them in sugar but you’ll probably need to do a water bath canning method in order to stop the citrus from going bad.

Doesn't washing the tangerines get rid of the good bacteria that would have multiplied during the fermentation process?
The fermented oranges turned out perfect. I had to give the oranges a good wash because I wasn’t sure if they were organic
I think this must be sea salt. No ionized salt

How long roughly does it take to ferment? I ferment a lot of vegs in just 2 days in warm weather
It took about four weeks for the oranges to get fermented because it was done in winter. It would take less time if done in summer.
