Whole Wheat Sourdough CARROT CAKE

    Recipe to make 1 cake:
    3 c shredded carrots
    2 c whole wheat flour or other whole grain flour of choice
    2 tsp baking soda
    1 Tbsp baking powder
    1/2 tsp salt
    1 1/2 tsp cinnamon
    3/4 c melted butter
    4 eggs
    100 g sourdough starter (fed or unfed)
    1 tsp vanilla
    2 c sugar (can reduce sugar by half if desired)
    1 Tbsp molasses
    Optional add-ins: nuts, dried fruit etc.
    Mix the dry ingredients together. Mix wet ingredients together, then pulse the dry ingredients into that until just barely combined. Fold in carrots. Pour in a 9x13" greased or lined baking dished and bake immediately at 350 degrees F. OR cover and allow to ferment at room temperature for up to 5 hours OR place directly in the fridge overnight, then bake.
    Allow cooked cake to cool completely prior to icing. Please note this cake will taste better if left to rest overnight after baking!
    Basic Cream Cheese Icing:
    1 stick unsalted butter at room temp
    1 block cream cheese at room temp
    1-2 c powdered sugar to desired sweetness level
    1 tsp vanilla extract if desired
