福建炒虾面 如何熬炒虾面的汤底做出好味道| Hokkien Fried Prawn Noodles | Mr. Hong Kitchen

    Sambal Belacan 食谱/视频
    • Sambal Belacan 叁巴峇拉煎辣椒...
    材料 :
    虾 800克 姜片
    蒜米 腊肠 芽菜 韭菜 米粉 黄面 鸡蛋
    调味:
    猪油 胡椒粉 鱼露 虾汤
    Ingredients (Diana Aw)
    1. Prawn 1kg, keep the shell for broth
    2. Ginger 3-4 slices
    3. Noodle
    4. Bee Hoon
    5. Minced garlic
    6. Chinese sausage few pieces
    7. Bean sprouts appropriate amount
    8. Chives appropriate amount
    9. Lime
    10. Eggs 2pcs
    11. Pork oil 1 tbsp
    Seasoning
    1. Prawn broth appropriate amount
    2. Pepper little
    3. Fish sauce little
    Method
    1. Heat wok with little oil and gingers. Once fragrant, add in prawn shells and stir fry till it turns dry and fragrant. Then add water and let it boil. Turn to low heat and simmer for 15min with lid on. Drain and set aside
    2. Heat wok with oil, add garlic and stir fry till fragrant. Add egg and fry. Then add Chinese sausage and fry. Add noodle and bee hoon and stir fry till fragrant.
    3. Add prawn broth and simmer for 15sec with lid on. Add bean sprouts, prawn and pepper and fry. Add pork oil and fry. Then add fish sauce and chives and fry.
    4. Dish up and squeeze some lime on it.
    5. Serve and enjoy! 💕

    Thanks for the tips. Singapore version has bean sprouts, pork, sotong and prawns. Can add pork lard and sambal chilli to enhance the flavour. Your dish looks delicious 👍

    I cooked this dish many times. To improve the taste 1) add in Pork lard, 2) add in chicken stock, prawn stock is not enough. 3)optional: add pork meat or calamari(sotong) or both.
    This dish is very delicious, a variation of this dish can be seen in Singapore called Hokkien Noodle based on Prawn stock as well, it is very popular there but the cooking technique is quite different. RUclips this dish you will find out.
    Penang's version is slightly different too. All equally delicious, do try at least one of them. One of my favorite noodle dishes.

    this dish tastes even better if you add Vegies and hot Prawn stock at the last minute, how much stock it's up to you, more will make the dish a little wet. No soy sauce? Add lard and sambal belachan👍.
    I cooked this dish many times before.

    米粉炒得太绵了,米粉的湿度有可能有太多了。这是我的感觉。应该是分散的

    Nobody uses ginger to fry prawn. Instead use garlic to fry. Add Chinese cooking wine to bring out the flavour.

    不可以❌用這種太大路的魚露喇,米粉會哭。魚露是 越南 > 泰國 > 香港 > 大陸 。頂級的魚露是越南家庭手工生產的,裝在小號礦泉水瓶子裡,一支十塊錢美金吧,需要親自去越南買,或者託越南朋友買。退居其次,也要買越南工廠生產的,有六十度、四十度 等標籤,越高度數代表魚肉含量越高。不一定越高越適合,要看用途,越南雜貨店有售。一定要買有標明度數的,那代表一間魚露廠的認真執著。如果真的找不到,有度數的泰國魚露將就可以用。根據經驗,超市有賣的魚露都很差。本人是潮州人,自小就吃魚露,不斷比較才有這心得,不是亂吹的。較好的魚露KL的 Pandan Perdana Trinh 珍越南雜貨有售。

      谢谢你给的建议 长知识了👍 但你说的鱼露不是每个地方都能买到 且10块美金换成马币就差不多40+令吉 不是每个家庭都消费得起那么贵的调味料 这一道菜呢 鱼露也不是主要调味料 只是辅助调味 小弟也给点小意见 有得罪的地方抱歉

      @@MrHongKitchen 十塊美金那種只是說一下罷了,實在難買。越南雜貨店裡十五塊馬幣一大瓶的也很好了,一點不貴,比起超市的划算的多。魚露的確在這裡地位不很重要,但在你煮的魚露米粉中就是關鍵角色了。
