  • 啊春做虾面的原则是食材一定要新鲜。虾汤的虾他只选用本地新鲜没泡过药水的花虾,所以春虾面的汤头无论你何时去吃,都持续维持在一贯水准,浓郁鲜甜无腥味。虾汤的辣椒糊,要文火耐心炒,方能炒到好吃又漂亮 ‘ang ang’的辣椒糊。感谢啊春老板大方分享他那30年做虾面行走江湖的秘笈,有时间大家就在家试做吧,没时间的就来春虾面找啊春,吃他那亲手做很‘ho liao’的虾面吧!
    💡 春虾面卤面Penang猪肠粉lobak啊杂也很好吃
    虾面住家食谱:
    分量:7- 8 人份
    准备时间:20分钟
    煮时:2小时
    【虾面辣椒糊】
    材料:
    1.5公斤 辣椒糊(Cili boh)
    1公斤 油
    50克 巴拉煎
    3汤匙 糖
    1茶匙 盐
    煮法:
    1. 加入一半份量的油入锅,开文火
    2. 加入巴拉煎,拌炒至巴拉煎全溶化
    3. 加入辣椒糊和剩余的油,继续以文火拌炒至油变深红色(大盖20-30分钟)
    4. 熄火,辣椒糊静置一分钟
    5. 把辣椒油*取出,盛入容器里,待用
    6. 把糖和盐加入辣椒糊里,拌匀至溶化
    7. 辣椒糊*盛入容器里,待用
    【虾面汤煮法】
    材料:
    1.2公斤+- 花虾
    7公升 水/高汤
    3汤匙 冰糖 (随自己喜好调整)
    2茶匙 盐 (随自己喜好调整)
    少许 味精(可以不放)
    准备功夫:
    1. 把花虾洗净,烫熟沥水,取虾肉,虾壳放入搅拌机搅碎
    煮法:
    1. 把搅碎的虾壳加入含有7公升水/高汤的汤锅里
    2. 用个勺把虾壳碎和水搅拌至完全混合,沥虾壳渣
    3. 把冰糖,盐和味精加入锅里,搅拌,文火煮至冰糖溶化
    4. 加入适量的辣椒糊和辣椒油,搅拌均匀至虾汤煮滚
    5. 熄火待用
    【组合*】
    材料:
    适量 米粉面
    适量 芽菜
    适量 蕹菜
    适量 水煮蛋
    适量 花虾(已去壳)
    适量 炸葱酥
    煮法:
    1. 把米粉面,芽菜和蕹菜烫熟沥水,入碗
    2. 加入水煮蛋和花虾
    3. 淋上虾面汤
    3. 加入炸葱酥
    4. 虾面完成, 趁热享用
    小提示:
    1. 剩余的辣椒糊/油可以用于炒菜/炒面/炒饭
    2. 组合食材可以随自己喜好做更改
    The handsome boss of Choon Prawn Mee has been serving prawn mee for 30 years already, let’s invade his kitchen and learn from him what are the tricks and tips to prepare a delicious bowl of prawn mee!
    Portion: 7 - 8 pax
    Prep Time: 20 minutes
    Cook Time: 2 hours+
    [Prawn Mee Chili Paste]
    Ingredients:
    1.5 kg chili boh
    1 kg cooking oil
    50 g belacan
    3 tbsp sugar
    1 tsp salt
    Steps:
    1. Add half portion of cooking oil
    2. Add belacan, stir-fry the belacan with slow heat until it is completely dissolved
    3. Add chili boh and the remaining portion of cooking oil, continue to stir-fry for around 20 to 30 minutes until the oil turns dark red (or maroon color)
    4. Turn off the gas, let the chili paste rest for a minute
    5. Retrieve the chili oil into a container and set it aside
    6. Add sugar and salt into chili paste, stir evenly until it is completely dissolved
    7. Store the cooked chili paste into a container and set it aside
    [Prawn Mee Broth]
    Ingredients:
    1.2 kg+- flower prawn
    7 litre water/ broth
    3 tbsp rock sugar (adjust to your own taste preference)
    2 tsp salt (adjust to your own taste preference)
    Some MSG (optional)
    Preparations:
    1. Clean the flower prawns thoroughly, blanch, remove the prawn meat, mash the prawn shells with a blender
    Steps:
    1. Add mashed prawn shells into a pot filled with 7 litres of water/ broth
    2. Use a ladle to mix the mashed prawn shells and water evenly, filter out the mashed prawn shells
    3. Add rock sugar, salt and MSG (optional) into the pot, mix it, cook with low heat until the rock sugar dissolved completely
    4. Add in a suitable amount of chili paste and chili oil, mix evenly until the broth is boiling
    5. Turn off the gas and set the broth aside
    [Combination]
    Ingredients:
    Adequate rice noodle
    Adequate bean sprouts
    Adequate spinach (kangkung)
    Adequate hard-boiled egg
    Adequate flower prawn (shells off)
    Adequate fried shallots
    Steps:
    1. Blanch rice noodles, bean sprouts and spinach, set it into a bowl
    2. Add boiled egg and flower prawn
    3. Add prawn mee broth
    4. Dress with fried shallots
    5. The prawn mee is now done! Enjoy while it’s hot!
    Tips:
    1. The balance of chili paste or oil can also be used to cook other dishes like fried noodles or rice.
    2. The ingredients can be adjusted according to your own preference.

    I am a regular visitor for many years. The prawn mee is my favourite but his other dishes like loh mee is equally delicious. If you have the appetite, you should add pork rib to your prawn mee. It is beyond words especially when you consume with his condiment of ground garlic mixed with sampal. The quality has been consistent throughout the years and I would give it a 5 stars.
