Farmfoods Swift St Louis Pork Spare Ribs cooked on the Kamado

Hi Guys,
Today we're cooking the Farmfoods St Louis Style Pork Spare Ribs.
These are meaty ribs trimmed to a St Louis style.
The grill is 120°C - 150°C. I cooked them for 2.5hrs to internal 76°C, then coated with Angus & Oink Sweet Bones and Butts and Fools Gold, wrapped for a further 1.5hrs until they probed tender at 96°C

I have 10 at the moment in the freezer, price has gone up by a couple of quid but these are a good cut and meaty as you would expect from St Louis cut. Any one on the U.K. where I can get full packer brisket?

They are 12.99. Problem with them is that they are not trimmed properly St Louis cut and have a ton of cartilage tubes in the bottom which I don’t find the most appetising. They are OK.
