Georgian Cheese Stuffed Bread (Khachapuri)

  • Neither brunch nor pizza night will be the same when you try this khachapuri, the sensational cheese-stuffed Georgian bread with a runny yolk center!

    INGREDIENTS
    Dough:
    100ml milk;
    100ml water;
    5g Dry yeast
    1 tsp sugar;
    1/2 tsp salt;
    300g flour;
    30ml sunflower oil.

    Filling:
    150g Hard cheese
    150g Mozzarella
    50ml milk;
    salt to taste.

    Also:
    1 egg;
    Butter;
    2 eggs for the filling.

    METHOD
    Knead the dough. Leave on for 15 minutes.
    Pour in sunflower oil and knead. Let rise 40 minutes.
    Divide the dough into two parts. Roll out two balls and let rise again. Cook the filling. Make a flat cake with your hands and put the filling in it.
    Twist in the form of a boat. Bake in the oven at 220C/430F for 15 minutes. Put an egg in the deepening of the baked boat and bake for 1 minute.

    1/2 cup milk

    1 or 2 eggs

      1 or 2 eggs? 1 egg is used for the wash, then 1 egg in each boat, so in essence, 3 eggs total

    I want to assert a fact here
    In India , in Hindi language, KachaPuri has significance as - " Kacha'' means unripe , raw or uncooked and "Puri" means a type of fried bread! Although I don't understand how this word came to this Georgian bread?!?!? 🤔🤔

      It means "curds" and "bread" in the Georgian language.

      @@ranjanbiswas3233 Georgian is Kartvelian, not Indo-European, but the word პური (puri), which means ‘bread’, comes from Greek, which is Indo-European

      In Georgia, we don't have many types of cheese... we have "sulguni", "chkinti kveli", just "cheese" for everyday use, and "sakhachapure kveli" witch is used to make khachapuri... it's soft and it doesn't have too much salt.

      @@montee2603 if you ever make it again, usually feta and mozzarella mixed together is really good with khachapuri, I am Georgian and this is how everyone in my family makes it

      @@humoursabji4045 ხაჭო (khacho) means cheese curd, and პური (puri) means bread. This last word comes from Greek though, it’s just a coincidence we share the word with Hindi

      It should be soft and not too salty... this person in the video used the wrong cheese and also you should stir butter and egg before eating, else it won't be tasty.
