Might be the tastiest fish in the world but its the same price as salmon... hope it doesn't get too popular in the US
What do you do do with the skin? Are you going to eat it or peel it off to the side and discard?
I'll preface that I am not a big fish eater. You want to eat that seared skin!

Why do you serve it with skin side up?
That’s to keep the skin crispy. If served skin side down, you’d lose all the beautiful crispiness that was just created, especially if serving with a sauce as he did. Happy eating! :-)
