      Your back can handle way more than your arms, this is only a stretch for the back, it's not even close to enough to hurt your back/spine.
      Anything you can lift in one hand isn't going to hurt your back, your arms or hands would fail first in these positions.

    Is there a special name for exercise #2 0:38 or is it just a variation of dumbbell rows? How many sets and reps of each? Do you do any pull-ups?

      One Arm Dumbbell Row But in my own way You only need 6 exercises, 3 rounds of 10 to 12 reps per exercise

      Yes, but in this video there are exercises at home with dumbbells on a day and there are exercises at the gym on a day. This means that if you exercise at home with dumbbells, do only dumbbell exercises on a day, and if you exercise at the gym, do only gym exercises and not all of the exercises there.
