Smoked Crab Legs Recipe | How to Smoke Snow Crab Legs on Ole Hickory Pit

  • Smoked Snow Crab Legs with BBQ Butter

    For these smoked snow crab legs, I start with 10lbs of frozen snow crab legs from my local seafood department. They usually come in a box and these legs have been fully cooked prior to freezing, so all we’re really doing is reheating them in a smoky environment.
    You first want to let the crab legs thaw in the refrigerator overnight. The next day I rinse the snow crab legs individually under cool water and place them on a platter to drain slightly. Go ahead and fire up your smoker to 250⁰ with just 1 chunk of cherry for smoke. You can use any smoker for this application just run your pit steady at 250⁰.
    BBQ Butter Recipe:
    - 1lb Real Butter (melted)
    - 2 Tablespoons Killer Hogs The BBQ Rub.
    - 1 Tablespoon Dried Parsley
    - ½ teaspoon Crab/Shrimp Boil seasoning
    - Juice from 1 ½ lemons
    Place the BBQ Butter in a small pan and dredge each crab cluster through it. Once the pit is up to temp, place the legs on the cooking grate and smoke for ½ hour or until they’re steaming hot. Every ten minutes they get basted with the remaining butter mixture for a little extra flavor.
    After 30 minutes at 250⁰, the smoked crab legs should be done. The smoked crab meat should be steaming hot and release from the shell with ease. Pile the legs up on a large platter and serve them immediately with plenty of clarified butter, cocktail sauce, and fresh lemon.

    Just smoked my first crab legs exactly like your video taught me too! My family just came from a friends seafood boil last week and they now proclaim, my smoked crab legs....your crab legs... are mind blowing and the best they’ve ever had!

    I did these on Saturday and man they were tasty.You don’t even need to dip them in butter sauce.They are that good.I really appreciate you doing all these videos.Ive really learned a lot and I use most of recipes when I cook.

    Man Malcolm, I just gotta say Thank You for making me step outta my comfort zone & try new things! I just smoked some snow Crab Legs! & Let me tell you, I'll never eat them the normal way again! Wow... we must of said WOW over 25 times... the flavor just smacks your taste buds around. Man...Oh man... this was one of the greatest food experiences ever! If you love crab, & not scared to try new things... give this a go.

    I've been drooling over this recipe for a few months and finally had a chance to make it. UN-FREAKIN'-BELIEVABLE. I live in South Florida and have eaten snow crabs from some pretty incredible restaurants, but I think my results from this recipe compete amongst the best, but at a third to half the price. The smoke adds such a dimension that the restaurants can't offer.
    Even my wife loved the crab legs and she's a tough customer under the best of circumstances. She kept raving about the seasoning and I realized that other than a few basic seasonings, the big difference that piqued her palate was the Killer Hogs rub. I LOVE it on pork but was skeptical that it would be as good on seafood. It was AMAZING.
    For something to make my wife rave about it, it has to be BEYOND merely good. But Malcolm said it in the beginning of the video: once you have crab legs this way, you'll never go back to steamed or boiled. He's 1000% right. We are now believers.
    I have a question though. In other recipes, I've seen other cooks/chefs advocate slicing the long leg shells or even cutting thin strips out of them so as to expose the internal crab meat to the smoke and marinade. It makes sense and sounds good, but Malcolm, what are your thoughts on it? Is it worth the time/trouble?
    Great recipe; great results on my first effort. I look forward to fine-tuning the already exceptional results.

    Gave this a try this weekend and was amazed at how much the smoke got into the meat. Is was wonderful. I even reheated some in a pot of hot water and found it to push some of the smoke flavor farther into the meat. My family loved this recipe and I'm sure we will add this one to the ever growing list of best off the smoker. Thanks for the recipe.

    Once again, you prove you put out the best and most instructional BBQ/Smoking videos out there. That's why I buy your products: not only are they delicious for the flavor profiles I enjoy but you have made me an infinitely better cook. I'm a loyal customer because whether it's video instruction or rubs/sauces/marinades, you just churn out consistently outstanding content.
    I don't know whether or not you have formal teaching experience, but you also consistently adhere to successful teaching methodologies. You start with an overview of what you want to accomplish, you demonstrate step-by-step detailed instructions on how to achieve the aforementioned objectives, then you present a detailed recap and review of what was done. That is SO IMPORTANT for viewer comprehension and retention. You're a natural born teacher whether you've had formal education on it or not. After I've watched your videos a couple times, I have the understanding and confidence to "just go do it" without having to refer back to step-by-step instruction. Clearly, I'll double check ingredient amounts, but as far as what needs to be done, when it needs to be done, and what a particular step is accomplishing, your videos lay it out so clearly that it rarely requires further review.
    When I'm looking to cook, I check to see if there's a Malcolm Reed recipe to follow. If there is, I stop there because I know I'm not going to find anything better. Thanks for all your hard work and thanks for making me a better cook.

    I cut slits down the sides of the crab legs to get more of the butter and smoke into the meat. Best crab recipe I've tried so far.

    Like everyone else, I too would love to spend at least a day or more with Malcolm to learn as much as possible from him. Love the videos, and I made these crab legs along with his pepper encrusted filets for an early mother's day weekend dinner for my wife (and my kids by default I guess 😆). I was using my kettle for that so I dug out my old electric Masterbuilt smoker, dusted it off, and chased all the spiders out of it. Made these in there and they came out amazing! If I could have gotten the shells down, I probably would have eaten those too. I'm pretty sure I'll only make these this way from now on, and this combo made for an amazing surf and turf that got rave reviews. Thanks for all the awesome videos! Keep em coming.

    Great Video Malcom!!! I'm going back and forth on how to use my wood pellets. I have a cake pan that I've drilled holes in, I put the pellets in that and then put that directly on the coals. Should I cover the pan with some foil and poke holes in it or just leave it wide open? and should I let the pellets sit for a little bit on the heat or should I just put the meat on right away right after I put the pellets on.
